WIAW: April 23, 2014

It is official.  I am not the greatest at remembering to take pictures of my food for WIAW posts.  And when I do remember, I hardly ever take my WIAW pictures ON Wednesday.  That is so wrong, right?  Last week I featured my Thursday eats and this week I am featuring my Tuesday eats.  I seem to feature pretty much every single day other than Wednesday.  One of these days, though, I am going to get it right.  And on that day, we should all celebrate and throw a party!

Now while this is not quite as exciting as an actual party, I still think that we should celebrate all of the delicious food that I ate on Wednesday Tuesday.

What I Ate Wednesday Tuesday

Breakfast

WIAW 42314The first part of my breakfast was a green smoothie.  This smoothie contained unsweetened vanilla almond milk, French Vanilla Vega One, one frozen banana, frozen zucchini slices, frozen strawberries, and fresh spinach.  Will this ever get old?  No, probably not!

Pumpkin Breakfast BakeBreakfast part 2 was Robyn’s pumpkin baked oatmeal (with cacao powder added in) topped with strawberry jam that I melted in the microwave before eating it.

Mid-Morning Snack

fresh fruitFresh fruit for the win.  I cannot even begin to tell you how excited I am that cantaloupe is finally tasting good.  I am so glad to have it back in my life!

Lunch

WIAW 42314 3Lunch was leftover Minestrone soup that I dug out of my freezer.  This was my last batch of leftover soup.  It looks like it is time to get my freezer stocked back up again!

Afternoon Snackage

WIAW 42314 7The usual: celery and peanut butter.  Can’t stop, won’t stop.

Dinner

WIAW 42314 9Dinner was something that I have been majorly obsessed with the past few months: popped quinoa and cheesy eggs (made with vegan Daiya cheese) that I topped with sriracha and sea salt.  SO good.  Oh, and what you do not see is that I accidentally dumped about a fourth of this on my living room carpet while attempting to eat it.  Picking up quinoa off of carpeting is NOT fun.

Evening Snacks

WIAW 42314 11Yes, this is weird.  But what can I say…I love peas!  Leftover peas and baby carrots with hummus.  My method for eating this is to eat all of the carrots first and then mix together the peas and leftover hummus.  Don’t knock it until you try it.

WIAW 42314 12More fruit.  Like I said earlier…I am obsessed.  I will take any and all excuses to eat cantaloupe right now.  The fresh berries weren’t too shabby either 😉

WIAW 42314 13And finally, I capped off the night with a baked (microwaved) sweet potato topped with Justin’s vanilla almond butter.  I do not foresee ever tiring of this combination anytime soon.

    This looks like such a delicious day of food! I am so intrigued about the zuchinni in your smoothie - I have tried all sorts of weird and wonderful things in smoothies, but I have to try zuchinni! I love that you can get lightly salted rice cakes in the US, in Australia we aren't that privileged. I imagine they would taste a bit like popcorn! And I love peas too - I approve of your snack!       Yay for peas! I love hearing that others love them too :) And what a bummer on the rice cakes. They are definitely my favorite ones. I guess I like to keep those simple. Please do try the zucchini in your smoothie! You honestly cannot even taste it :)

    Delicious eats girl, I'm especially loving that sweet potato at the end :)! And I'm totally with you about fruit lately- watermelon, apples, bananas, strawberries, pineapple, oranges, cantaloupe--> I want 'em all!

    You know I totally approve of your love for Justin's ;) The only thing is that I'm kicking myself because the last time I was in Whole Foods, I meant to pick up a vanilla AB and ended up grabbing a classic one instead. Still tasty, but nowhere near as good :(

      Ahh man, I would be SUPER disappointed if that happened. I have never actually bought the classic because I am so obsessed with the other ones, but I am sure it is still good at least!

      Quinoa is one of the most frustrating foods to cook with!! No matter how hard I try to carefully poor the quinoa into the measuring cup, I always end up losing some. I am afraid to even think about how much of it is under my stove and refrigerator...and what else is under those appliances, for that matter. It can't be good :/

      I LOVE baked oatmeal because I can make it on the weekend and have about 3 breakfasts already premade for the week. It is awesome! And yes...I am pea obsessed. I actually JUST got done eating a new grilled cheese that I came up with and it involved peas ;)
