I am coming to really like Wednesdays.  Obviously Fridays, Saturdays, and Sundays are my favorite.  That’s a no-brainer, right?  But Wednesdays and Thursdays are really becoming quite fabulous, too!  They are the gateway to the end of the work week and the weekend, and I cannot help but love the fact that Wednesdays are all about food…even if my What I Ate Wednesday posts seem to feature other days’ eats.  But hey, every day should be about food.

What I Ate Wednesday Saturday

Breakfast

WIAW 4914The first thing that I did after stepping out of bed on Saturday morning was head to the gym for a legs/abs workout.  As soon as I got home, I downed a glass of water and drank a green smoothie.  In the mix: unsweetened coconut milk, chocolate Vega One, frozen banana, frozen cranberries, frozen zucchini, and lots of spinach.  Oh, and clearly I need to invest in a new cup.  Hopefully I’m not jinxing the weather with this one 😉

breakfast egg nachos 2A couple of hours later I ate my second breakfast, a plate of Scrambled Breakfast Nachos.  This recipe will be coming ‘atcha soon!

Lunch

WIAW 4914 3Lunch began with a side salad with balsamic vinaigrette dressing…

WIAW 4914 2…and ended with this.  Totally weird, I know.  But it was what I was craving so I went with it.  I baked microwaved a large Yukon gold potato and topped it with leftover pasta sauce from my fridge and peas.  In case you forgot, I love peas!

Afternoon Snacks

WIAW 4914 4No surprise here.  I am nowhere near sick of this afternoon snack.  This bowl contained a microwaved diced apple, cinnamon, almond butter, and Enjoy Life chocolate chunks.  The melted AB and chocolate combo is the BEST.

WIAW 4914 5I also tried the cream soda Zevia for the first time and was a fan!  You are going to want to come back tomorrow for a fun giveaway 🙂

Dinner

Evening Snacks

And finally, I rounded out the day with a couple of snacks.

WIAW 61913 5…and a giant bowl of air-popped popcorn that I ended up topping with coconut oil spray, nutritional yeast, sea salt, and a sweet and tangy bbq seasoning.  So good!

    I just bought Zevia yesterday and literally had the cream soda in my hand, but Josh convinced me to swap it out for the Dr Pepper-type flavor. Now that I know it's tasty, I'm sad I didnt get it!

      Yeah, that is a major bummer. I am so not a Dr. Pepper fan so I think that is one Zevia flavor I would not like. But the cream soda was really good!

    I love Zevia! The Dr. Pepper is my favorite with cream soda in second place.

      Haha, that is so funny because I literally just commented above that I do not like Dr. Pepper. I have just never been a fan. Therefore, I have never even tried the Zevia version. I am definitely all about the colas though!

    Just so you know - I tried Vega just because I saw you use it so much - guess what? I bought more Vega protein this weekend from Iherb...where do you find the best prices on it as I'm in love!

      That is awesome! I LOVE it. I actually have been buying it at Whole Foods whenever I see it on sale. I have heard that iHerb is a good place to get it, as well as Vitacost. I really need to start ordering it online and saving myself some money ;)

    Not ending the night with popcorn would be such a crime. I haven't had a regular potato in way too long...def grabbing some at the store and topping it with alllll the peas :)

      It took me forever to try it, so don't worry. But seriously...don't waste anymore time and make sure you give it a go. It is SO good!

    I can't wait for the breakfast nachos recipe! I love anything with avocado. I usually have toast with avocado and tomato, but I really ought to spice it up a bit! I also have a ton of apples right now and am so making myself a bowl of gooey nut butter, apple and chocolate goodness while I catch up on Nashville tonight!       You definitely need to make both!! And I am so with you on the avocado/toast thing. Have you ever tried toast with jam, avocado, and sea salt? The sweet/savoriness of it is awesome!E
