WIAW: January 29, 2014

Guess what, friends?  We have almost made it…to the end of January, that is!  I think most of us can agree that January is not the most fabulous month ever (especially if you live in a cold climate), so to say that I am excited about this being the last Wednesday of January would be an understatement.  In celebration of it being Wednesday and almost being February, let’s check out a full day of my latest eats!

What I Ate Wednesday Sunday

Breakfast

I started my day off with a tasty green smoothie!  In the mix was unsweetened vanilla almond milk, french vanilla Vega One, frozen banana, frozen cranberries, frozen blueberries, and tons of spinach.  I swear, just about every smoothie that I make has at least 3-4 cups of spinach in it..and I love it!

Ohhh, yes!  The second part of my breakfast was a delicious grilled breakfast sandwich with nut butter and fruit.  More on this baby in a future post!

Lunch

Lunch was a giant serving of a new dish I cooked up on Sunday.  Think Indian-inspired spaghetti squash.  More on this recipe in a future post!

Snacks

Afternoon snackage was a sliced Fuji apple dipped in chunky cashew butter.  Holy yum!

I also drank a Zevia cola.  I like many of the flavors, but I think I will always be a cola girl.  Zevia and I have become best friends on Sunday afternoons.

Dinner

Dinner was two white bean burgers (more on these in a future Friday Foodie Favorites post!) with barbecue sauce, cooked broccoli, and a dill pickle spear.

Snacks

Baby carrots and sugar snap peas with garlic hummus.

Fresh strawberries and green grapes.

And a big ‘ole bowl of popcorn!

There is nothing quite like rounding out your week with a great day of eats!

Also, sorry for so many recipe teasers ;).  They will make their way to the blog soon enough!

    If there's one month out of the year that I don't like, it's January, without a doubt! It just feels like it's never going to end and while I try not to live by wishing away time, I'm very grateful January is just about to an end.       Haha..you will! It's actually not mine, but will be on one of my Friday Foodie Favorites posts. And trust me, white beans in bean burgers are SO good. These are my new favorites!

      They are both GOOD ones!! Isn't spaghetti squash so delicious? It is amazing the numerous ways that it can be made, too! I will forever be hooked on it. I am going to be super sad when it is out of season and super expensive :(.

    I couldn't be happier that January is almost over. That means (hopefulllly) only one and a half or two months of serious cold weather. Your smoothie looks great!     I just tried to make my hubby a grilled nut butter + banana sandwich...my mom used to always make them for us...he said he'd never heard of such a thing and didn't think it'd be good...now I know I'm not nuts and indeed they are delicious no matter what he thinks!

      I bought it back when Jif first came out with it and I had a really great coupon for it. It is not quite as natural as I would like, but it is REALLY tasty!

    That Boom Chicka Pop popcorn rocks. It tastes so much better than microwave popcorn. Your breakfast smoothie is awesome. I love adding tons of greens to my smoothies.
