WIAW: January 8, 2014 + Vegiversary!

Welcome to the first What I Ate Wednesday post of the year!  Exciting times, am I right? 😉  In all seriousness, I actually happen to think that food is pretty exciting, and I love seeing what other people eat in a day.  I guess that is what happens when you are a self-proclaimed foodie.  And for those of you who are also foodies, let’s take a look at What I Ate Wednesday the Day After Christmas (yes, I realize that was forever ago).

Oh, and before I forget: Have you entered my giveaway yet? 🙂

Breakfast

Two pieces toasted Ezekiel bread + 2 dippy eggs.

1 clementine, blackberries, and red seedless grapes.

Mid-Morning Snack

Sliced banana + peanut butter.

Lunch

Butternut squash lentil loaf (from the freezer) with barbecue sauce + dill pickle + quinoa cranberry pecan salad leftover from Christmas dinner.

Afternoon Snacks

A Christmas sugar cookie.

A giant apple.  I don’t mess around with tiny ones.  Anyone else ever tried the Envy apples?  They are taaaasty!

Dinner

Spaghetti squash pasta puttanesca.

Evening Snacks

TJ’s Crunchy Curls.  It had been awhile since I last had these and I think I am back to being hooked! 😉

And there you have it!  A day of almost-vegan eats (hey, you need some eggs and cookies now and then!).

And finally, I cannot go without giving mention to my vegiversary!  That’s right.  I have officially been a vegetarian for two years.  I cannot wait for many more delicious veggie-filled years ahead!

    Happy Vegiversary! I hope you eat soemthing super delicious to celebrate. I'm beyond impressed at how healthy your day after Christmas was. I was in such a sugar coma from cookies that I think I slept until the middle of the day when I stumbled to the kitchen, made a grilled cheese, and then fell back asleep ;-)

    Well happy veggiversary to you! I always loved vegetarian cooking for how creative it was… I definitely miss the days where I could eat all veggie, but I can't deny that I feel better with some meat in my diet. Happy Wednesday, lady! xox

      Thank you, Amanda! To each their own, right? What works best for one person and their body will certainly not be the same for another. Plus, you still get plenty of delicious veggies and eats in so I am sure you body is quite happy with your food choices!

    What a yummy day of eats! I especially love the looks of that dinner and I've never heard of Envy apples. I'm not sure that they sell them in this area, but I'll keep my eye out. Have a great Wednesday!

      That is a serious bummer!! I am not looking forward to the day when they are out of season here in the states. I just can't justify spending 8 dollars on something that doesn't even taste that great :/.

    I don't like tiny apples either!! Same with bananas. I was going to tweet something this morning like, "Puny bananas are the worst." because my dad bought some really tiny ones for us but then I realized it would sound really dirty if I said that... haha.       Haha, that is hilarious!! ;) And I agree. I am definitely the girl who looks for the biggest bananas and apples when I am at the grocery store..even if it means paying a little extra.

    Happy vegiversary! I like my apples as big as possible! I do buy the bags lately though of the little pink lady ones since my son likes to take them to school.       No, they definitely can never be replaced. I actually get super sad when I am at the grocery store and I can only find small apples. It's just no good!! :(

    WOOOOO! Girl I just had my 2 year vegiversary in October and it feels so good! Although, I do eat seafood so I'm not quite a full on veggie eater. Still feels so great though! Congrats to youuuu beautiful!! :)

      I definitely think my recipes have come a long way from when I first started my blog. It is amazing how much I was forced to have to be creative once I adapted a vegetarian diet. Until then I just ate the same old boring thing. It has been really good for my creativity and recipe development.
