Happy Friday!!  We have almost made it to the end of the week!  And in celebration, let’s take a look at some seriously good eats that I have discovered (and tried!) around the web.

friday favorite cauliflower rice paellaA couple of weeks ago I tried Mama Pea’s Cauliflower “Rice” Paella.  I forget who recommended this dish to me, but it certainly comes as no surprise since it is centered around cauliflower “rice” ;).  I subbed in black olives for the Spanish olives, but other than that I follow the recipe exactly.  My pictures certainly don’t look as pretty as Mama Pea’s, but this dish definitely tasted good!  And can I just say that I love that it contains peas?  Yes, peas are another one of my obsessions.

friday favorite apple sauceSeveral Sundays ago, I cooked up a batch of Alysia’s Crockpot Applesauce.  I used agave nectar in place of the honey in order to make it vegan.  This recipe was SO easy and resulted in the most delicious chunky-style applesauce.  I instantly fell in love with this at first bite.  I ate it for snacks and I even topped pancakes with it.  I will definitely be making this again, especially after I visit a local apple orchard.

friday favorites kale tacosLast week I made the Food Babe’s Kale Tacos for dinner.  I finally tried kale for the first time about six months ago and I have been hooked ever since.  Who knew that kale could be the star ingredient of tacos?  Trust me when I say that it most definitely can be.  These were super tasty.  Plus, it didn’t hurt that I topped them off with avocado and some sriracha sauce ;).

friday favorites vegetable pancakesThe minute that I saw Dixya’s recipe for Vegetable Pancakes, I knew these were made for me.  I love vegetables and I love pancakes, so why not combine the concept?  I have always been a fan of potato pancakes, but I was absolutely loving this healthier and greener vegetable recipe.  I topped my pancakes off with some Tofutti herb and chive vegan cream cheese and some sriracha sauce.  They were SO good!

And finally…

friday favorite tempeh saladI made Robyn’s Tempeh “Chicken” Salad” for a quick and easy meal.  Tempeh and I are pretty much best friends right now, so this recipe totally spoke to me.  For dinner, I served it over a bed of lettuce.

friday favorite tempeh salad 2I served the rest of my batch on rice cakes as a part of my lunch the next day at work.  I can’t decide which way I liked it better.  That is probably because it was so stinkin’ delicious!  I also absolutely ate some of it all by itself because I couldn’t keep my spoon out of the bowl ;).  This is definitely a must make.

I hope you all found some tasty recipes to make this weekend or for the coming week.  But let’s not be thinking too much about the coming week because it IS Friday and almost the weekend, after all :).

    My mom makes crockpot applesauce in the winter usually, it is SOOOO freaking good!!

    Wow it looks like you have been doing a lot of cooking! I really need to get better about trying al the amazing recipes I see! Also, wish I could enter your giveaway but I looked and no stores in my area show it.

    I need to make the vegetable pancakes. I often think about doing so and then forget lol. I would probably even try subbing oat bran for the flour.

    I love making applesauce in my rice cooker. I just dice up as many apples as I want, throw them in the rice cooker with just a little bit of cinnamon and set it on "regular." and about an hour later I have chunky applesauce without any added sugar or anything! Delicious.

    I love this blogger foodie wrap up idea! I have to try that tempeh chicken salad ASAP. There's a block of Tempeh in my freezer wishing for this cleanse to end hehe ;)

    My husband and I are going to an orchard tomorrow (if the rain holds off for a bit at least), and I definitely think I'll try making a batch of that homemade applesauce after. I've never made it before but it'd be so simple with the slow-cooker!

    Oh man everything looks good! I really need to start making stuff like this for myself. Im a total baker, so I spend my free time making myself breads and muffins instead of REAL food for meals! lol

    Ooh crockpot applesauce! I can't imagine how amazing the house smelled after that! I love applesauce, but I admit that I've always just bought Motts unsweetened original at the store and added my own cinnamon. I never thought about completely making it from scratch! It looks to die for! Love everything you eat! So hearty and delicious! Have a lovely weekend!

    Feed me? :). Seriously though, I want to you come hold my hand while I attempt to make cauliflower rice. It's scary! And that "chicken" salad... Geeeez. Look fantastic.

    See, I knew you'd like the Paella just as much as I did :). It's just so good and actually been too long since I last had it. It can't be just coincidence cauliflower's on offer this week, right?! Thanks for the tempeh recipe inspiration. Did you steam it before proceeding with the recipe directions? I've heard you were supposed to and never had it 'raw' before.

      The paella was awesome! And no, I did not steam the tempeh first. I just ate it raw and I liked it. You could certainly steam it ahead of time though.

    Ohhh, love the idea of the vegetable pancakes...but coming from me, are you really surprised by that? ;) I need to check those out for sure! Wow, I never thought to feature kale in a taco, but it makes total sense since its chocked full of protein! And omg, homemade applesauce is definitely on the fall to-do list this year!
