WIAW: September 4, 2013

Not only are three-day holiday weekends awesome due to the extra day off, but they are also awesome because they make the next work week shorter, too!  We have already made it to Wednesday and it seems like we haven’t even done much.  That is my kind of week! 😉  This also means that What I Ate Wednesday snuck right up on me.  I remembered to photograph my Tuesday eats (at the last minute), and am quickly (and lazily ;)) writing up this post on Tuesday night.  As a result, I apologize for the not so pretty pictures…but hey, you get the picture (no pun intended!).

Pre-Workout

WIAW 9413 3Before heading to spin class I ate half of a banana and downed some water to hydrate.  I ate the remaining half of my banana when I got home.

Breakfast

WIAW 9413 6I ate breakfast at work.  The first part was a “baked” (microwaved) sweet potato, which I topped with PB2 peanut butter.

WIAW 9413 2I followed up my potato with a vanilla coconut milk yogurt and a white peach.

Lunch

WIAW 9413 4Lunch was leftovers from Monday night’s dinner: Happy Herbivore spicy mustard chickpeas (which I added spinach to) served over brown rice.

WIAW 9413 5I also ate a Granny Smith apple and some baby carrots and a La Croix sparkling water (unpictured).

Snack

WIAW 9413 7After work I snacked on two Wasa crackers topped with Tofutti herb and chives vegan “cream cheese” (SERIOUSLY amazing!), sliced tomatoes, and sea salt.

Dinner

summertime fried cauli rice 2Dinner was a new recipe that I made: End of Summer Veggie Fried Cauliflower “Rice.”  I’ll post the recipe soon…but not TOO soon since I have gone a bit overboard on the cauliflower “rice” lately ;).

Snacks

WIAW 9413I snacked on a veggie/hummus plate…

…some fresh cantaloupe, black seedless grapes (so addicted), and raspberries…

WIAW 8713 6…and more of this.  To say that I am a bit obsessed would be an understatement ;).

There you have it.  A food-centered Tuesday.  Now that I have started doing spin classes, I have found that on the days that I spin my appetite is absolutely ravenous.  I guess burning hundreds of calories in one class will do that to you.  I’m sure not complaining.  I am a snacker and I love it :).

    How do you like that Vanilla coconut milk yogurt? It sounds great but I know So-Delicious products can be a bit costly sometimes.

    I totally love these short weeks too, makes everything fly right by! Next thing we know Fall will be here, and you won't here my complaining about my love for Fall. Can't wait for that veggie fried cauliflower rice! Sounds awesome.

    YUM sweet potatoes are so good with nut butter! Have you ever tried almond butter and cinnamon on it? SO GOOD

    I love sweet potatoes with peanut butter and every time I eat one, I get the weirdest looks - it's so good!!

      It seriously is!! This was the first time that I tried it and it is pairing SO well with the tomatoes right now!

      I really enjoy them, especially when topped with Tofutti or Laughing Cow cheese and/or jam!

    Since I've been digging coconut lately, I really want to try coconut yogurt! I also love wasa crackers. They're really crunchy!

      You should definitely try the yogurt. In my opinion, it is the best vegan yogurt out there.

    I agree about the long weekend! I'm already looking forward to Veterans Day in November. Those chickpeas look delicious, I will have to hop over to her blog and check out the recipe. Great job on doing spin! I tried once and almost died 25 minute in. They are so intense! Have a great Wednesday!

      Spin is intense but SO addicting!! And I'm not sure that the chickpeas are on the website..I think they may only be in her cookbook :/.

    I love the "short" weeks due to holidays, too! Only problem is I get confused as to what day it is all week. Love the fried cauliflower dinner!

      I get confused, too! But I certainly don't complain when I realize it is Wednesday and not Tuesday! ;)

    Leftovers for lunch are the best. Your after work snack sounds so good. It would be perfect for me because I'm always craving something crunchy and a little sweet. This would cover that in a healthy way!

    Loving the short weeks too! Next week will be short for me too, due to HLS..... I just thought about that. Two 4-day work weeks in a row, can't beat that! All of your eats look delicious and I've been loving the white peaches too!

    Mmm I love Wasa crackers. I top them with Laughing Cow cheese since I'm not vegan, heirloom tomatoes, and garlic salt. Heaven!

    Yum! Everything looks so yummy and clean :) I've been microwaving lots of sweet potatoes lately and topping them with almond butter. I added some coconut yesterday and that was a really good call. Doing spin in the morning really does make you the hungriest bear all day long. Meghan and I eat everything in site when we do spin!

    Gosh, everything looks great! I like the idea of sweet potatoes in the morning. Sweet but not gonna cause a sugar crash.

    Whenever I workout in the morning I always eat sooooo much more throughout the day! I also love that you eat a sweet potato for breakfast :)

    It looks like you had a wonderful day of eats! I haven't tried the so delicious yogurt but peaches and sweet potato sound great for breakfast. I found I was always SO hungry when I was running a lot in training for a half.

    You HAVE TO try TJs kettle corn - it is SO ADDICTING! I made the mistake of buying it a few weeks ago and cannot go a day without it :P And sweet potatoes + PB (or PB2) are my jam, another thing that I cannot seem to go a day without!

      I saw the kettle corn on your blog or twitter (I forget) and was instantly intrigued. I am a huge fan of the sweet/salty combo! I am a little afraid to buy it for fear of how addicting it sounds ;).

    Love that pre workout banana! I can't imagine having anything else! :) I LOVE that yogurt, but it's a little pricey, so I've stuck to some other kinds, but it's so good! PB2 and a sweet potato sounds like bliss! I"ll have to give that a try!

    Those spicy mustard chickpeas sound fantastic! I've always enjoyed chickpeas but I've been eating way more than normal lately ... and I don't think that's going to stop anytime soon : )
