Who is ready for another round of What I Ate Wednesday Tuesday?  No, you aren’t?  Well…too bad!

Oh, and watch out because I totally went against my usual “mid-morning” snack (gasp!).  You better read on to find out all about it ;).

What I Ate Wednesday: July 17, 2013

Breakfast

Yes, this is a recycled picture, but I didn’t exactly think that it would be appropriate for me to take a picture of my breakfast while at work ;).  You get the gist, though: a baked sweet potato topped with peanut butter and cinnamon.  YUM!

Mid-Morning

Now here is where things get interesting.  I know that most of you are probably pretty used to seeing a picture of a banana for my mid-morning snack.  But yesterday, I got a little crazy and ate some veggies instead.  In the bowl were radish slices, tomatoes, and roasted buttercup squash.  It was actually kind of a nice change up.  But don’t worry, I am not getting rid of the banana forever.

Yesterday’s lunch consisted of leftovers from Monday night’s dinner.  It was a delicious vegetable and bean chili soup.  I will be posting more on this in a future Friday Favorites post :).

Afternoon Snack

On my way to the gym after work, I snacked on a cashew Kit’s Organic Fruit + Nut Bar.  I love these bars!  Not only are they delicious, but this particular variety only contains 4 ingredients: organic dates, organic cashews, organic, almonds, and sea salt.  You can’t beat that!

Last night’s dinner consisted of a mock “tuna” salad sandwich from the Happy Herbivore on whole wheat toast with fresh spinach and onions (YUM!), a dill pickle spear, and my roasted turnip french fries dipped in ketchup and mustard.  It was soooo good!

    It is exciting that it's Wednesday! :) Radishes, huh? I have a hard time eating them unless they're in a salad and I'm going to roast some per your recipe soon! :) Yay for switching things up a bit.. Have a fab day!

      Yes, I definitely love radishes roasted MUCH more than raw, but I didn't have time to roast them when I was packing my meals for work so I just went with it;).

    Why have I never thought to have a sweet potato for breakfast?! That fruit and nut bar sounds delicious! Though I really should work through by current bar stash before getting another one... SHOULD being the key word ;)

    Kit's Organic?? I've never even seen them and I love Clif Bars! Definitely have to look for those to change up my usual Mojo Bar :)

    I'm just seriously impressed every week, like so many veggies and fruits. I eat those but I def have a lot more 'other' foods too lol

    NEW CLIF BAR?! I have never seen that one, I must look for it! Sounds similar to Larabars, which I LOVE!

    Feels good to switch up a snack every now and then, doesn't it? The veggies look delicious. I usually reach for fruit as a quick snack, but I should try to grab veggies more often. Maybe cutting them up the night before would help?

    Oh, I'm so glad it's Wednesday too!! :-) I know I've said it before, but really got to try that sweet potato out!!! Hmmm...I think I have a sweet potato at home too! Okay...I think I know what I'm having for breakfast tomorrow!!!

    Oh what an exciting mid morning snack. I actually had a banana for my mid morning snack today. I need to have sweet potato and egg for breakfast soon, it used to be one of my go too's!

    I was going to say about your dinner... That looks a whole lot like a chicken/tuna salad sandwich! Sounds delicious! Golden delicious apples are one of my favorite kinds :)

    For as much as I love sweet potatoes, it's a bit of a shock that I've never actually had them for breakfast! That one with pb and cinnamon looks so good that I might just have to try it now! ;) And I haven't ever seen that type of Clif bar before. I'm definitely gonna check 'em out.

    Whoaaaaa girl, don't get too crazy with that midmorning snack switch up ;). Hahaha really though, all of your food looks delicious. Especially those fries with dinner. Roasted veggies just make me SO happy.

    The ingredients in the kits organic fruit and nut bar sound a lot like the ingredients that go into a Larabar - I love Larabars! I am in awe of anyone who can eat raw radishes - just cannot manage to choke them down! glad to have stumbled on your blog

      The Kit bars are awesome, aren't they? And the sweet potato sticks are SO good. They have 5 other flavors of the sticks that are equally good. I love the BBQ flavor.

    I LOVE The smell of bacon haha so I need to try vegetarian bacon! YUM! That sounds so delicious :) I've seen those sweet potato snack things but never tried them! Since you said they're good, I'll have to try them!
