Roasted Part 9: Green Cabbage

I admit it.  I am officially obsessed with trying to roast pretty much any and all vegetables.  I have featured several roasted veggie posts in the past (we are up to #9 right now!), and I can guarantee that there will be many more to come in the future…likely the near future ;).  I really am convinced that there is not a single vegetable in existence that cannot be roasted.  Feel free to prove me wrong, but for now I am going to go on believing this.

I discovered my love for green cabbage within the past year, and since then I absolutely adore cooking with it.  Just last week, however, I attempted to try roasting it for the first time.  Note to self: awesome idea!  This roasted cabbage turned out absolutely delicious.  And now, I want you all to give it a try.

Roasted Part 9: Green Cabbage

Makes 2 large servings

Ingredients

olive oil cooking spray
1 small head of green cabbage
fine sea salt
black pepper
garlic powder
onion powder

Directions

1. Preheat oven to 425 degrees F.  Line two large baking sheets with foil and spray with olive oil cooking spray.

2. Cut the bottom end off of the head of cabbage.  Cut the cabbage into half-inch strips and carefully place the cabbage strips onto the baking sheets.

3. Spray the cabbage with cooking spray and sprinkle with the seasonings.

4. Roast the cabbage for 1 5 minutes.  Carefully flip the cabbage over, and continue roasting for an additional 5 to 10 minutes, or until golden brown.

The cabbage should go from this…

…to this:

Oh, so perfectly roasted and golden brown!

I roasted my cabbage on the weekend in preparation for the week to come.  This roasted cabbage paired wonderfully with the curry egg salad sandwich that I ate for dinner one night last week, and made for a delicious snack during an afternoon at work.  Yes, I eat cabbage as a snack ;).

Are you convinced yet?  Yes, cabbage is delicious.  And yes, roasted cabbage is even better.  Now go make some :).

Girl I too am obsessed with roasting anything I possibly can! I've even started doing it to all of my casseroles for the last part of their cooking. I swear it makes everything better! Does this taste similar to brussels sprouts, maybe? I haven't had cabbage a lot..
    • cleaneatingveggiegirl July 16, 2013, 12:49 pm
Roasting is simply amazing :). And yes, I suppose that if I had to compare it to any other vegetable it is probably most similar to roasted brussel sprouts.

I love cabbage, and I too have a slight obsession with roasting. I adore roast B sprouts, so I assume cabbage would be tasty too!
    • cleaneatingveggiegirl July 16, 2013, 12:50 pm
Yes, both are SO so tasty :). I have not roasted brussel sprouts in awhile. I definitely need to do that soon.

    • cleaneatingveggiegirl July 16, 2013, 12:53 pm
I will have to try it with my coconut oil spray the next time that I make it. The addition of red pepper flakes sounds nice too. I love some spice :).

I've never thought of roasting cabbage! You're awesome, I love it when people fill me in on new ways to eat underrated vegetables! I can imagine adding some extra spices or herbs to this also. Yum! Thanks!

Yes, I think that the seasoning possibilities are pretty much endless with this one. Let me know if you give it a try and what seasonings you use.

I'm not crazy about green cabbage - it mostly reminds me of St. Patrick's Day dinner growing up. However, I think I'd give it a try if it was roasted.
    • cleaneatingveggiegirl July 16, 2013, 12:55 pm
You should definitely try it again. I never thought that I liked it until I really starting cooking with it this past year. Plus, roasting makes everything taste better, right? ;)
  • Anna Smith-James (@AnnaTheApple88) July 16, 2013, 11:03 am
I love roasting veggies with balasmic vinegar. It adds a sweet and sharpness to it. I've never roasted cabbage but it totally appeals to me. Yum.
  • rebacox July 16, 2013, 11:25 am
People are roasting all sorts of things nowadays. I wonder if I would like this better than raw cabbage?

Cabbage for a snack? I'm SO down! I saw some cabbage coming in at the garden this week so now I know exactly what to do with it when I get my hands on those babies :)

Roasting is an obsession of mine and my Mom's also! My faves are carrots, sweet potatoes, and broccoli but I'll be sure to try this after I finish my juice cleanse ;) Have you ever roasted chickpeas? They're heavenly.
  • Brittany July 16, 2013, 10:28 pm

I'm completely obsessed with roasting vegetables lately. I actually have a head of broccoli and cauliflower in the oven now. I'm not sure about you, but I secretly like when some pieces get burnt. Burnt veggies with ketchup.. YUM!
    • cleaneatingveggiegirl July 17, 2013, 7:41 am
Oh, I definitely like the way that you think! I find that broccoli, cauliflower, and green beans are the best tasting "burnt" veggies!!
  • Oh My Veggies (@ohmyveggies) July 17, 2013, 8:20 pm
I love cabbage--it is way under-appreciated. I think I roasted it once and it's definitely time to try it again!
  • Em @ Love A Latte July 24, 2013, 10:35 am
The only way I've ever had cabbage is as a wrap (for fried tofu and veggies inside) but I would love to try it other ways and this looks awesome!
    • cleaneatingveggiegirl July 24, 2013, 8:04 pm
Let me know if you roast it! I think that you will like it! I bet that roasted cabbage would be fabulous on a sandwich, too!
  • Katherine July 25, 2013, 7:21 am
Okay, some reason it won't let me comment on your newest post, so I wanted to tell you that I'm so happy you're taking a blogication! I've taken a little one these past few weeks and it's been amazing! Good for you! Since I haven't properly commented on this post either, I just wanted to say that roasting anything is quite fantastic. This looks amazing!
