Friday Foodie Favorites: July 12, 2013

Boy am I glad that it is Friday!  It has been crazy busy this week at work and I am so SO ready for a (hopefully) relaxing weekend.  Are you up to anything fun?  The only things that I have planned to do are to sleep in (assuming my body will let me sleep past 7:30), do some cleaning and grocery shopping, do a little apartment shopping/decorating, watch TV/movies, read, and nap.  That’s right…mostly a whole lot of relaxing.  I also hope to get in a few great workouts, but only if my knee will let me.  I just got a cortisone shot yesterday and I have to rest it for the next two days.  After my rest days, though, I am hoping that it isn’t too sore and I can get my fitness on!  Say a little prayer that the cortisone works miracles for my knee.  I am a bit pessimistic because I have not had very good luck with the shots in the past :(.

But enough about me and my super exciting 😉 weekend plans, let’s take a look at five recipes that I have eaten (and loved!) over the past several weeks.

First up is Chelsey’s recipe for Cabbage Lentil Soup.  I don’t know about you, but in the past I always associated cabbage soup with “diet” food.  Now yes, this soup is certainly low in calories, but that is the only thing that it is “low” in.  It is super high in flavor, quantity (you get a lot of bang for your buck, so to speak), veggies, and protein!  I loved this soup and I already have plans to make it again soon!  If you think that you do not like cabbage, think again.

…Kiersten’s Seitan Cacciatore.  I am a big fan of seitan, so I was super excited about cooking up this recipe.  I followed Kiersten’s recipe, except I reduced the amount of servings, left out the flour, and used sliced black olives instead of kalamata olives.  I served my seitan cacciatore dish over cauliflower “rice.”  This was good!  I would definitely make and eat this one again.

Over the past few weeks I also made Courtney’s Banana Bread Pancakes for One.  I had a major pancakes craving, so brinner it was!  I followed Courtney’s recipe exactly, except I used whole wheat flour in place of the all-purpose flour.  I topped off my pancakes with melted blackberry jam.  These babies were SO good!  I also really loved that the recipe was for one serving since most pancake recipes that I find are for at least 2 to 4 servings.  These are already on my meal plan for next week and I am so excited to make them again.

…it’s Michelle’s Vegan Fish O’ Fillet.  I mentioned this in a past WIAW post, but I loved it so much that I want to give it a shout out again here in my favorites post.  I served my Fish O’ Fillet on whole wheat toast with fresh spinach leaves, onions, and Vegenaise vegan mayo.  It was one tasty sandwich that you can bet I will make again.  Seriously, who knew tofu could be so delicious?  Oh wait, I have been trying to tell you that for MONTHS now! 😉

And finally…last, but certainly not least:

I mentioned in Wednesday’s WIAW post that I ate Guacamole Cauliflower Rice for lunch.  And the verdict?  Welp, Kim’s recipe is awesome!  I followed Kim’s recipe nearly exactly, except I only used the juice of one lime (mine was really juicy), I cooked my cauliflower rice before combining the ingredients (I love it that way), and I added in a few dashes of Bragg’s Liquid Aminos because they are my favorite thing to add to cauliflower rice.  I was SO pleased with the results.  This is a super veggie-filled dish and is full of delicious flavor.  Seriously, how can you go wrong with a dish that contains both cauliflower rice AND avocado?  It sure won me over :).

    I so need to try the fish o' fillet sandwich!! I've been eyeing that ever since Michelle first posted the recipe, and I get jealous every time you mention it haha ;) Everything else looks wonderful as well! Cauliflower rice is another one on my to make list. I'll definitely have to check out that recipe as you can never go wrong with guacamole!

    So I'm curious, where did you buy the vegan mayo? DId you have to hit up a specialty store or do most supermarkets carry it now?

      They sell it at Whole Foods, but I can almost always find it at regular grocery stores in my area.

    Yum! I had planned to make Kim's rice this week but my avocados weren't ripe! I'm hoping to make it next week instead as it sounds delicious!

    I love single-serving recipes. They are great because you can easily quadruple them to make a regular-sized recipe whereas it's much harder to take a recipe for 10 and get it down to 1. I'm glad that I'm not the only one enjoying soup this summer :) I hope your relaxation this weekend is the recovery you need to run without your knee hurting. A cortisone shot doesn't sound fun, especially if it you haven't had the best of luck with them in the past :( I'll be thinking of you!

    Good luck with the shot! I hope it helps and can get that fitness on! I have no plans at all for the weekend and it's summery weather so it will be nice. The recipes look great, I am intrigued by the cauliflower avocado rice!!

    Sometimes, most of the times, I love nice relaxing weekends. I love weekends where you can relax, get in some good workouts and eat good food. I hope your knee allows you to get in some good workouts.

    Hope your knee gets feeling better soon! I know from experience that knee pain is definitely not fun. Thanks so much for sharing the cauliflower rice. I'm glad that you loved it as much as I do!
