Black-Eyed Pea and Veggie Bowl with Cauliflower Rice

Sometimes the simplest recipes are truly the best recipes.  You know what I am talking about, right?  The recipes that only include a few healthy and whole ingredients, or those that are thrown together from ingredients already found in your pantry or refrigerator, often produce the tastiest results.  I most certainly stand behind this belief and am ready to show you that cooking does not have to be fancy or complicating in order to create delicious dishes.  This Black-Eyed Pea and Veggie Bowl, which is made with cauliflower rice, is a fabulous example of simple cooking at its finest.

Black-Eyed Pea and Veggie Bowl with Cauliflower Rice

Slightly adapted from Elise’s recipe for succotash (she seriously has some of the best simple recipes!)

Servings: 1-2 (I ate it all at once but it was a huge portion)

Ingredients

1 1/2 cups cooked black-eyed peas
2 cups of riced cauliflower (this recipe explains how to “rice” cauliflower)
water, for cooking
1 clove garlic, minced
1/4 red bell pepper, diced
1/4 orange bell pepper, diced
1/4 small red onion, diced
1/3 cup frozen peas
1/3 cup frozen corn
4 TB Bragg’s Liquid Aminos (or low-sodium soy sauce)- more, if desired
1/2 tsp sriracha sauce
1/2 tsp cumin
1/2 tsp paprika
black pepper, to taste

Directions

1. Cook black-eyed peas according to package directions and rice your cauliflower.

2. Heat a thin layer of water over medium-high heat in a large skillet.  Once hot, lower the heat to medium and add in garlic, peppers, and onions.  Cook for approximately 6 to 8 minutes, or until softened.  Add additional water, as necessary.

3. Stir in peas and corn.  Cook for an additional 3 to 5 minutes.

4. Lower the heat to medium-low.  Stir in cooked black-eyed peas, riced cauliflower, liquid aminos, sriracha sauce, and seasonings.  Stir until well-combined and serve.

As I am sure that you have noticed, this truly is a simplistic recipe.  It uses whole and natural ingredients like cooked beans, vegetables, and spices.  It is also incredibly simple to make.  I prepared, cooked, and combined all of these ingredients in about 20 minutes.  I don’t know about you, but I can definitely dedicated 20 minutes out of my day to prepare a healthy, whole, and delicious meal like this one.

While this certainly was not the first time that I had created a simple “bowl” recipe with leftover vegetables in my refrigerator, this dish did provide me with several new cooking experiences.  I cooked beans (instead of buying them in a can) for the first time.  I prepared and ate black-eyed peas for the first time (seriously, they are good!), and I tried cooking with Bragg’s Liquid Aminos for the first time in this recipe (I made this awhile back if you are wondering, since I have mentioned Bragg’s in several previous posts already).  Bragg’s Liquid Aminos are a much healthier version of soy sauce with way less sodium than even low-sodium soy sauce.  I absolutely recommend cooking with them.

    The only time I've had black-eyed peas is on New Years' Day - my friend's southern grandma said that if you eat them on January 1, you'll have good luck all year. This recipe looks so healthy and natural - and I am impressed by how you were able to combine such interesting ingredients!

    When I worked at TJ's I would eat the same lunch almost EVERY day. It was a bowl of some kind of base either rice, or lentils, piled with tomato and avocado. Then finished with salsa, and I had chips to dip. It was my favorite. I think I need to have that tonight!

    Mm i love making stir frys, salads, and egg scrambles with leftover stuff i find in my fridge and pantry! Simple but effective and always tasty :)

    Looks simple and delicious! I love anything with spaghetti squash. Throw any sauce on it with some cheese, and you've got yourself a meal :-)

    My boyfriend grew up in the south so black eyed peas are a normal thing for him, and he wants dishes with them all the time. I bought a can like a year ago and we still haven't used it... I've been pretty terrified! But if you say they're good, I'm more likely to trust them. Josh has terrible taste sometimes ;-)

    To be honest, I am not a huge fan of cauliflower rice... I tried it once and I think it was a texture thing. Maybe if I try to mix it into this recipe, I'll like it!

    Yep, I can imagine this absolutely amazing. Yum. I would like some!! :) My go to easy recipes are stir fry veggies. Always easy to put things in a pan with olive oil and go!

    This recipe reminded me of the frozen Amy's black eyed pea bowl. Yours is much different though and looks very tasty! I love black eyed peas and need to eat more of them!

      Oh you really need to! I love it and I don't really even like cauliflower that much. You just have to make sure that you season it well.

    I am all about simple. Most nights of the week my dinner consists of either a sweet potato (baked or in wedges), brown rice or quinoa, topped with a crazy mix of vegetables, either black beans or chick peas, topped with avocado...flavor wise its either Asian, BBQ sauced, hummus or Italian somehow (and leave off avocado)...simple! and delicious

    I'm all for simple cooking. I hate any recipe that's too involved--that kind of thing is okay once in a while, but not everyday. This looks delicious!

    I see black eyed peas in the store but have never tried them. This recipe sounds really good, I love cauliflower! I made cauliflower crust pizza and am now excited to try it as rice.

    So I don't think I've ever tried black-eyed peas! What are they like (as in, does it have a texture like black or kidney beans)? Also never tried the cauliflower rice things...so many new things for me to try in this post! ;-)

      They have the same texture of any other bean that you might buy in a can. For some reason I thought they would be tougher/crunchier? but the texture was just like that of black beans, kidney beans, white beans, etc.

    Sigh, that's just another reason I'm bummed my food processor broke and Amazon is taking ages to ship the new one I ordered. I'm not against using grains but cauliflower rice is such a delicious meal to make in a pinch of the time cooking grains takes. Have you tried Mama Pea's Cauliflower Rice Paella yet? It's really good!
