Can I be honest with you?  I am so not in the mood to write up an elaborate and descriptive blog post.  After missing several days of work over the past week due to my family emergency, I have spent the past two days at work being a busy, busy bee trying to get caught up!  As you can imagine, now that I am home from work all that I want to do is relax, as opposed to attempting to be creative.  But despite my lack of energy, I still want to share a tasty recipe with you all!  So here you will find just that.  A recipe.  And only a recipe!

Asian Baked Tofu

Adapted from this recipe, which calls for chicken.

Servings: 2

Ingredients

olive oil cooking spray
3 TB Bragg’s Liquid Aminos or low-sodium soy sauce
1 TB seasoned rice vinegar
1 packet natural sweetener (I used Truvia)
1 tsp sriracha sauce
1/8 tsp garlic powder
1/2 block extra-firm tofu, drained and pressed

Directions

1. Preheat oven to 400 degrees F.  Spray a baking sheet with olive oil cooking spray.

2. Stir together Liquid Aminos, rice vinegar, Truvia, sriracha sauce, and garlic powder until well-combined.  Set aside.

3. Cut tofu into half-inch squares.  Place the tofu in a small shallow baking dish and pour the marinade over the tofu.  Place the tofu in the refrigerator for at least 30 minutes to allow the tofu to soak up as much of the marinade as possible.

4. Place the marinated tofu onto the baking sheet.  Bake for approximately 20 minutes.  Flip the tofu over and continue cooking another 5 to 10 minutes, or until the tofu is crispy.

Serve the Asian Baked Tofu with a side of your favorite grain (I love seasoned brown rice or quinoa) and/or your favorite vegetables.

I chose roasted fresh green beans and roasted parsnips for my side.  If you have never tried roasted parsnips…do it!  Now!

This tofu is protein-packed, crispy, flavorful, and all-around delicious.  Enjoy!  Oh, and happy Friday! 🙂

      Agreed. Asian food is awesome. He is! He was discharged on Tuesday and is at home recovering.

    I have yet to try liquid aminos. Does it really taste just like soy sauce? And this looks like such a simple but delicious way to dress up tofu.

      I just tried them for the first time a couple of weeks ago. I wouldn't say that they taste JUST like soy sauce, but VERY close. I actually prefer the taste and I love that it has way less sodium in it.

    I didn't know that tofu could even be crispy, but this sounds really great. I've heard awesome things about liquid aminos but have never tried them myself!

    Thanks for sharing! I love tofu at Asian restaurants but am afraid of all the oil required to replicate them at home.

      This is definitely a much healthier recipe than most Asian recipes. I love using Bragg's, too, to cut down on all of the sodium.

      Thank you! And trust me, I was scared to try it at first, too! I think that it is a bit of an acquired taste, but I LOVE it now!

    I'm surprised you even cooked anything! When I get busy, I just grab food and shove it in my mouth, without cooking or seasoning or anything :) or make terribly choices and go out to eat.

    I used to make tofu like this all the time - sriracha and soy sauce really make it taste divine. Yum! I have NEVER once thought to bake it though. Nice!!

    I haven't baked tofu for so long! Usually I just pan-fry. Think I'm going to have to give this method another shot!

    I love baked tofu! It's probably my husband's favorite way to eat it, too, so I make it fairly often. We go between seasoning similar to this recipe, and just using barbeque sauce. Either way, it's great!

    Roasted parsnips are seriously the best thing ever. And I actually have a parsnip in the fridge that I wanted to roast but forgot about! Thanks for the reminder ;) And that tofu looks wonderful! I love how you spice up tofu, tempeh, etc. It's a good way to show everyone just how awesome vegetarian food can be :)

    Even though I love your descriptive posts, I'm glad you're taking time for YOU. Your family has been in my thoughts and prayers - I hope everything is okay. <3 This tofu looks amazing! Back in my vegan days, I lived off the pre-marinated and baked blocks of tofu. Little did I realize that it tastes even better when made at home! It's been awhile since I've bought tofu, but now I totally want to. :) Hope you're having a restful and happy weekend! <3 xoxo
