Roasted Part 7: Potato Wedges

And now onto the roasting (and seeing how it was 101 degrees here in Omaha today, I would say this is quite fitting).

I am officially a veggie roasting fool.  I am a firm believer that nearly every vegetable tastes even more amazing when it has been roasted.  I now find myself trying, consistently eating, and loving vegetables that I never thought I would like simply because they have been roasted.  Some of my favorite vegetables to roast include: green beans, radishes, asparagus, brussel sprouts, sweet potatoes, broccoli and cauliflower.  Pretty  much any vegetable in roasted form is delicious, though!

It has been quite awhile since I have dedicated a post solely to one vegetable, but let’s get back into it with another “Roasted Part *” post, featuring…

…”B” Size Potatoes!

Roasted Potato Wedges

Servings: 1 to 2

Ingredients

3 to 4 “B” size potatoes, red or gold
olive oil cooking spray
sea salt
black pepper
garlic powder
onion powder

Directions

1. Preheat oven to 400 degrees F.  Line a baking sheet with foil and spray with cooking spray.

2. Dice potatoes into one inch pieces.  I always leave the skin on.

3. Place the potatoes onto the baking sheet.  Spray the potatoes with cooking spray and sprinkle with seasonings.

4. Roast the potatoes for 15 minutes.  Remove from the oven and shake the baking sheet to rotate the potatoes.

5. Cook the potatoes for an additional 5 to 10 minutes, depending on how crispy you like them.

I generally serve my roasted potatoes alongside ketchup and mustard, but choose whatever dipping sauce you like.  Or, eat them plain!

These roasted potatoes make for the perfect side dish to any meal, especially sandwiches, but also make for a great breakfast accompaniment.  Lately, I have been addicted to eating them alongside huge salads for lunch.  Heck, I would even eat these for a snack! 😉

    Roasted potatoes like this are the best! Even leftover, cold out of the fridge. I usually add a little dried mustard powder to my spice mix as well. As for other roasted vegetables, you haven't had asparagus until you've roasted it, drizzled with a little garlic oil and salt... :)

    I pretty much like any vegetable roasted - especially potatoes! But, the favorite would probably have to be brussel sprouts!

    My fav vegetable to roast is hands down sweet potatoes. I also love roasted carrots- and you are going to think this is weird but roasted raisins are SOOO good!

      Roasted sweet potatoes are amazing! And I will have to try roasted raisins. I like roasted grapes, so I think that I would like that!

    My favorite roasted veggie is definitely cauliflower! I've even managed to convince my picky 5-year-old that they're just like french fries. :)

    You do roast some delicious looking food girl! I love roasting sweet potatoes in Coconut oil. Or Kabocha squash, or butternut squash. Lately though I've been all about roasted cabbage with balsamic. Yum!

    Oh gosh, I love ALL roasted vegetables! It's impossible to pick just one favorite, but a few of my go-to's include: sweet potatoes, Brussels sprouts, asparagus, zucchini, onions, and butternut squash. I haven't roasted white potatoes in ages, but I ate some amazing roasted baby reds at brunch on Sunday, and enjoyed them so much, I may try recreating them at home. Or, even better---I'll make your recipe! :)

    I LOVE roasted veggies and these I know I will LOVE!! I would totally eat them with a savory greek yogurt dip, hmm! I am a fan of roasted sweet potatoes and roasted butternut squash. So good.

    What are "B" sized potatoes? Smaller ones? I feel silly not knowing. I agree--roasted veggies is where it's at!! Love them!

      Yes, they are the smaller potatoes. That is what they refer to them at the grocery store, but maybe it is just a Midwest thing.

    I'm new to this whole roasting thing... why did I wait so long??! My currently favorite veggie to roast is Brussels sprouts - so so good! I could eat way too many of the little green beauties if they are cooking this way :)

    I've been roasting a lot lately, most recently tomatoes! I used them in soup and they were sooo good!

      Ahh, yes..those are definitely two of my favorites! Anyone who thinks that they don't like brussel sprouts definitely has not tried them roasted!

    I totally agree with you on the roasted veggies. I don't think there's a vegetable I don't like, especially roasted! The potatoes look awesome. Currently, I'm loving roasted Brussels! So good!

    I slice potatoes really thin and then roast them and broil for just a few minutes at the end! They crisp up nice. Potatoes are so versatile.

    Roasted veggies are the BEST! Once I figured out how to do it, I love any veggie roasted now. My favorite is brussel sprouts and carrots. I make roasted carrots by putting them in a bag (cut up) with some olive oil and garlic. I let it soak for a day, then cook it. AMAZING!

    we roast potatoes more than i'd care to admit. so much better for you then french fries! if you're ever at trader joes, buy a jar of 21 seasoning salute (no salt, but AMAZING on roast potatoes). also, if you want amazingly crispy fries, check out a post on annie's eats- her method of soaking potatoes in ice water is time consuming but makes roasted potatoes even better!
