Pizza Quesadilla

You are about to see a short and simple post for a short and simple recipe.  Let’s keep it easy, folks! 🙂

Pizza Quesadilla

Servings: 1

Ingredients

water, for cooking
1 clove garlic, minced
1/4 yellow onion, diced
1/4 large green bell pepper, diced
1/2 cup sliced baby bell mushrooms
1 cup fresh spinach, roughly chopped
olive oil cooking spray
1 whole wheat tortilla
1/4 cup pizza sauce
pineapple tidbits
black olives
1/4 cup shredded cheese (I used Trader Joe’s vegan mozzarella “cheese”)

Directions

1. Line a small skillet with a thin layer of water.  Heat over medium-high heat until very hot.  Once hot, lower the heat to medium and add garlic, onion, peppers, and mushrooms.  Cook for approximately 6 to 8 minutes, or until softened.  Add additional water, as needed.

2. Add spinach.  Lower the heat to medium-low and cook for 2 to 3 minutes, or until the spinach has wilted.

3. Preheat a griddle pan over medium heat.  Spray the pan with olive oil cooking spray.

4. Place the tortilla onto the pan.  Top half of the tortilla with pizza sauce, cooked vegetable mixture, additional desired toppings (I used pineapple and black olives), and cheese.

5. Fold the tortilla in half.  Cook for approximately 3 to 5 minutes on each side, or until golden-brown.

If you like pizza and you like quesadillas (honestly, who does not like either one of these two! ;)), then I can pretty much guarantee that this will make for the perfect lunch or snack for you!

    How does the TJs cheese compare to Daiya? It's cheaper so I've definitely thought about buying it before!

    This is pretty brilliant! I LOVE both quesadillas and pizza, but I've never thought of combining the two. Gosh, now the wheels are turning! I wonder what a pizza grilled cheese would be like!! Hope you're having a great week, Hannah! <3

    This sounds great! I love pizza and quesadillas! I really like pineapple cooked but have never been a fan of it on pizza, maybe it's just the pizza places I tried it from.

      I used to think pineapple on pizza was weird, but now I almost always add it to my veggie pizzas!

    Mmm.. pizza and quesadilla - perfect combo! I've made a less healthy version of this before.. still healthier than a slice of pizza, though.

    Yumo!! Agree about your reply to the above question...You can't beat Daiya! I think its the only tapioca based one so that might be why it tastes the best.

      Yes, Daiya is just plain awesome! It is usually worth it to me to just spend the extra money and get a great tasting product.

    yum! This sounds like a great, healthy way to get a pizza fix. Can I saw how much I love that you put pineapple on there? I don't think I've ordered a pizza in the last 6 years without pineapple on it -- it's just so tasty! And then I can pretend that pizza is good for me because there's fruit ;-)

      The TJ vegan cheese is decent, but if you are able to splurge a bit more on Daiya then I would stick with that!

    Ohhhhh yes. Looks so stinkin amazing!! My hubbys fav pizza topping is pineapple, but Im not one for warmed fruit unless there is ice cream smothered on top of it ;)

    those look so good, the crispy outsides look like the best part! I forget about pineapple as a pizza topping but what a great way to get some fruit and veggies in a dish!

      I really love pineapple on pizza. Some people are not into it, but it is one of my favorite pizza toppings :).
