Breakfast Veggie Pita Pizza

I mentioned awhile back in one of my What I Ate Wednesday posts that my co-workers and I enjoyed breakfast pizza one morning at work.  Growing up in the Midwest, breakfast pizza was a favorite breakfast treat for both my friends and me.  And anyone who knows anything about breakfast pizza knows that the best slice can be found at Casey’s General Store gas station.  So, imagine my shock when SO many of you commented on my WIAW post asking what breakfast pizza is and what it tastes like.  Seriously you guys, I was so surprised!  Now, you will never know what truly great breakfast pizza tastes like until you get it from a restaurant or from a gas station in the Midwest, but I will do my best to help you recreate and experience it within the comfort of your home (wherever that may be in the world!).

Breakfast Veggie Pita Pizza

Servings: 1

Ingredients

olive oil cooking spray
water, for cooking
1 clove garlic, minced
1/4 small red onion, diced
1/4 cup diced bell pepper (I used red and orange)
1/2 cup sliced baby bella mushrooms
1 cup spinach, roughly chopped
1 egg, beaten
hot sauce, to taste
black pepper, to taste
2 TB plain Greek yogurt
1 to 2 tsp sriracha sauce
1 whole wheat pita
1/4 cup shredded cheese (I used sharp cheddar)

Directions

1. Preheat oven to 350 degrees F.  Spray a small baking sheet with cooking spray.  Set aside.

2. Line a small skillet with a thin layer of water.  Heat over medium-high heat until very hot.  Once hot, lower the heat to medium and cook garlic, onions, peppers, and mushrooms for approximately 6 to 8 minutes, or until softened.  Add additional water, as necessary.

3. Add spinach and cook an additional 2 to 3 minutes, or until the spinach has wilted.

4. Beat together 1 egg, hot sauce, and black pepper.  Add to the skillet of vegetables and cook over medium heat until the egg is scrambled and almost fully cooked.

5. Meanwhile, as the vegetables and eggs are cooking, bake the pita for 3 to 5 minutes, or until it begins to brown a bit.

6. Remove pita from the oven.  Combine Greek yogurt and sriracha sauce.  Stir until well-combined.

7. Top the pita with the yogurt sauce, the vegetable and egg mixture, and with cheese.

8. Broil in the oven for approximately 3 minutes, or until the cheese has melted.

9. Cut the pita pizza into four individual slices…

…because this makes the pizza easier to eat, plus the mini slices are just too darn cute! 😉

And my taste verdict?  This individual breakfast pizza is pretty darn tasty, if I do say so myself!  The crispness of the pizza combined with the crunchy vegetables, creamy and spicy sauce, fluffy eggs, and melted cheese makes for a delicious combination.  Now, does this taste as good as gas station breakfast pizza?  Unfortunately, no.  But honestly, I was not expecting it too!  I am not a professional chef, by any means.  Even still, I was incredibly satisfied and happy with the results.  Oh, and did I mention how easy this is to make?  If you can dedicate 15 to 20 minutes of your time to this recipe then you are all set!

Now I am sure that it comes as no surprise that my version of breakfast pizza contains vegetables.  However, you could certainly add meat to yours, or use vegetarian “bacon” or “sausage.”  Also, if you are not a fan of spice, you could certainly use traditional pizza sauce or cover the pita in more cheese in place of the sriracha yogurt sauce.  Customize this pizza to your liking!  That is, after all, one of the best things about making homemade pizza, am I right?

      It is pretty much fool proof! If you like breakfast food and you like pizza then you should definitely enjoy a good breakfast pizza :).

    Yes I always add siracha to my eggs, so good :) I've never ever had a breakfast pizza but I'm visiting one of my best guy friends in a month and I know he would be all over this so I will have to try it!!

    Yes! Definitely remember breakfast pizza from growing up. We used to order frozen ones from Schwan's (familiar anyone?) and recently I thought about making one, but didn't know what to use for that creamy sauce... I like the Greek yogurt idea!

      Well, I technically made this before my vegan week...but yes, I have been letting dairy back in, especially in the form of eggs and Greek yogurt!

    I love making breakfast pizza, but I never knew places actually sold it! I'm not sure I would trust breakfast pizza from a gas station, but I'm glad you did because your version sounds pretty amazing. I never would've thought to make a yogurt siracha sauce! Yummmmm!

    oh this looks so good! I love breakfast pizzas, but I'm from MN and have had the Casey's version and when I was a kid had the Red Baron personal breakfast pizzas...so so good!

    Yum! This looks super tasty! Pizza for Breakfast sounds mighty delicious to me, although, I'm typically a sweet lover for my morning meal. I never would've though of adding yogurt to it, but it sounds unreal!

    Pizza is one of my favorite foods, but for some reason I just can't add breakfast items to it. Sort of like how I enjoy burritos, but don't like breakfast burritos. Not sure why, haha! But it does look like it'd be tasty!

    I love making pita pizzas, they're so easy but so yummy. I never thougt to use Greek yogurt and egg though in the sauce. Sounds really good. I'm usually really boring and just go for tomato sauce and cheese...time to liven things up I think!

    Very creative on the sauce there, m'dear. I have not had breakfast pizza, but I imagine it is regional the way that migas or breakfast tacos are "so Texas," which I had to learn when I moved there. :)
