What Vegans Eat: A Week of Vegan Eats

As I am writing this post, I have just finished eating my last food item of my week of vegan eats.  That is it.  I did it.  I ate a vegan diet- no animal products- for seven days straight.  I often eat vegan anyways, but this was certainly the first time that I went meat, dairy, and honey free for an extended period of time.  Was it challenging?  Somewhat.  But since I am so used to making vegan meals and the majority of the snacks that I buy are vegan, I did not have to stray away from my “normal” diet too much.  I will say, though, that I did really miss one thing this past week: eggs!  Tofu scrambles are great substitutes for me when I am craving scrambled eggs, but there really is not a good substitute for a delicious runny and dippy egg (or at least not that I have found).  Despite my longing for eggs, there were no other animal products that I missed or craved.  That, to me, makes for a pretty successful vegan week!

Now lets take a peak into my final day of my vegan week of eats!

Day #7: Saturday, March 30, 2013

Breakfast

vegan week day 7 2 y

Since I had been craving eggs for the past couple of days, I decided to fix myself a tofu scramble.  This tofu scramble consisted of tofu, onions, red peppers, zucchini, mushrooms, and spinach.  On the side I ate two pieces of toasted whole wheat bread smeared with blackberry jam.  This may sound like a weird combination, but I love making breakfasts out of both sweet and savory foods.

Mid-Morning Snack

vegan week day 7 3

The banana is appearing in a slightly different way in this final vegan week eats post.  I generally eat bananas  whole when I am at the office, but on the weekends I like to slice the banana up and serve it in a bright pink bowl! 😉

Lunch

vegan week day 7 9

For lunch I heated up leftovers from Friday night: a spicy Buddha Bowl…served on a plate.  Because that is how I roll.

Snack

vegan week day 7 4

While out getting in some retail therapy, I snacked on a Go Raw Banana Bread Flax Bar.  These bars are organic, raw, vegan, gluten-free, wheat free, and nut free, and are a great source of Omega 3s.  Essentially, they are awesome for you and they taste delicious.  I was loving this flavor and cannot wait to try the other varieties.

Dinner

vegan lasagna 7

For dinner I baked up a pan of vegan vegetable lasagna.  You guys..this was SO GOOD!!  I never would have guessed that it was vegan if I had not been the one to make it.  This recipe will definitely be hitting the blog later this week, so make sure you keep checking back because you do not want to miss this one.

Snacks

vegan week day 7 5

Last night I fixed up a smaller than usual vegetable plate consisting of celery and carrots with hummus.  What can I say, that lasagna was filling!

vegan week day 7 6

I finished out the night with a mandarin orange…

vegan week day 7 7

…and a serving of Annie’s Salted Caramel Kettle Corn.

vegan week day 7 8

Not only is the ingredient list for this kettle corn great, but it is delicious and seriously addicting, which is precisely why I portioned out one serving into a bowl and immediately put the bag away!  I know myself well enough to not eat it straight from the bag ;).

And that is all she wrote, folks!  I finished off my week of vegan eats with a tasty treat and a true feeling of satisfaction from having eaten plant-based for seven days straight.  It was somewhat of a challenge, at times, but for the most part it was a very rewarding and educational week.  I reaffirmed to myself even more that vegan foods are delicious and that following a vegan diet does not have to be limiting.  I hope you learned this, as well!

I'm not a veggie but I think if I were to go vegan the things I'd really miss would be chicken, eggs and cheese. They're like the basis for any quick meals I want. But it was interesting to see you're meals and see that they looked normal. They didn't look like you were missing out on anything really. I like the sound of your lasagna as well!

I LOVE that popcorn! So good!
  • Alex @ therunwithin March 31, 2013, 1:39 pm
I had no clue that popcorn was vegan, love that stuff!

Can't wait for that lasagna recipe. Sounds so good! Thanks for the links, too. I've considered going vegetarian, but always go back and forth.
  • The Vegan Grip March 31, 2013, 2:32 pm
Have you ever made a lasagne with daiya inside and cashew cheese on top? That's my 'sweet spot' of lasagnes - the daiya melts inside so perfectly and the cashew cheese gets crisp on top. Def recommend it :-) Also congrats on making it through the week!
  • Ashley @ AlmostVegGirlie March 31, 2013, 3:34 pm
Great job on making it through a week as a vegan! It's interesting that you missed eggs the most, I've never liked eggs so that was the easiest thing for me to ditch when I went vegan but I know that eggs are really nutritious and a great source of protein so if I decide to just be a veggie then I might incorporate eggs into some things.
    • cleaneatingveggiegirl March 31, 2013, 10:06 pm
Most other animal products I have found good substitutes for, but there really is no substitute for a fried, dippy egg which is probably why I missed it so much.

From the look of your day I could definitely be down with being vegan :)

    • cleaneatingveggiegirl March 31, 2013, 10:07 pm
I would love to go completely vegan, but am still struggling with the whole egg thing. I hope to start incorporating even more vegan days into my weeks soon.
  • kellamaphone March 31, 2013, 8:22 pm
nice job with your vegan week! i went a little crazy with my family dinner today, so i definitely have a vegan week coming up to get back on track. im a little suprised you didnt miss/crave dairy at all, since it can have addictive properties. im definitely (sadly) hooked on cheese-- though im excited to see the recipe you used on that cheeseless lasagna!
    • cleaneatingveggiegirl March 31, 2013, 10:08 pm
Cheese really is addictive, which is why people have such a hard time giving it up. Trust me, I still love it, but I am generally very satisfied with the substitutes like Daiya and tofu "ricotta cheese."
  • angela @ another bite please March 31, 2013, 9:17 pm

Ahh, so much to say! First, I always have sweet toast when I eat savory eggs--always! It's the only way to do it! ;) Second, I love your pink bowl. Third, I've seen the Go Raw bars at Whole Foods, but I've never tried them. I think they might be a great option for me, since I can't eat most bars now...I'll be checking them out more closely next time I'm there. Fourth, your lasagna sounds great--looking forward to that recipe! And finally, I've really enjoyed following your vegan journey; congrats on finishing! <3 xoxo

I can't wait for the lasagna recipe, yum! I would have missed eggs and yogurt but all of your meals looked great!
    • cleaneatingveggiegirl April 1, 2013, 1:48 pm
I missed yogurt a bit, but I could always buy almond or soy-based yogurt. Not having eggs was definitely MUCH more challenging!
  • makingthymeforhealth April 1, 2013, 1:21 pm
Eggs are a hard one to give up for sure. But your tofu scramble looks pretty tasty!

  • quartercenturysouthernliving April 1, 2013, 4:32 pm
You seriously have a gift for this! Everything you make and eat looks delicious- which I would not have thought could be done in following a vegan meal plan!!
  • Eating 4 Balance April 1, 2013, 5:02 pm
Okay, as you know, I'm probably the farthest thing from being vegan. Lol. That being said, clean eating vegan recipes always look so fresh and full of whole ingredients. I really like that aspect of it, and I've enjoyed this seven day series!
  • chareatsgreena April 1, 2013, 9:29 pm
Wow that's so awesome!!! That popcorn sounds so delish and that lasagna...swoon!!! I haven't had lasagna in a long time! Last time I made it, I made it with tofu ricotta...totally need to dabble into that again!!
