What Vegans Eat: A Week of Vegan Eats

As I am writing this post, I have just finished eating my last food item of my week of vegan eats.  That is it.  I did it.  I ate a vegan diet- no animal products- for seven days straight.  I often eat vegan anyways, but this was certainly the first time that I went meat, dairy, and honey free for an extended period of time.  Was it challenging?  Somewhat.  But since I am so used to making vegan meals and the majority of the snacks that I buy are vegan, I did not have to stray away from my “normal” diet too much.  I will say, though, that I did really miss one thing this past week: eggs!  Tofu scrambles are great substitutes for me when I am craving scrambled eggs, but there really is not a good substitute for a delicious runny and dippy egg (or at least not that I have found).  Despite my longing for eggs, there were no other animal products that I missed or craved.  That, to me, makes for a pretty successful vegan week!

Now lets take a peak into my final day of my vegan week of eats!

Day #7: Saturday, March 30, 2013

Breakfast

Since I had been craving eggs for the past couple of days, I decided to fix myself a tofu scramble.  This tofu scramble consisted of tofu, onions, red peppers, zucchini, mushrooms, and spinach.  On the side I ate two pieces of toasted whole wheat bread smeared with blackberry jam.  This may sound like a weird combination, but I love making breakfasts out of both sweet and savory foods.

Mid-Morning Snack

The banana is appearing in a slightly different way in this final vegan week eats post.  I generally eat bananas  whole when I am at the office, but on the weekends I like to slice the banana up and serve it in a bright pink bowl! 😉

Lunch

For lunch I heated up leftovers from Friday night: a spicy Buddha Bowl…served on a plate.  Because that is how I roll.

Snack

While out getting in some retail therapy, I snacked on a Go Raw Banana Bread Flax Bar.  These bars are organic, raw, vegan, gluten-free, wheat free, and nut free, and are a great source of Omega 3s.  Essentially, they are awesome for you and they taste delicious.  I was loving this flavor and cannot wait to try the other varieties.

Dinner

For dinner I baked up a pan of vegan vegetable lasagna.  You guys..this was SO GOOD!!  I never would have guessed that it was vegan if I had not been the one to make it.  This recipe will definitely be hitting the blog later this week, so make sure you keep checking back because you do not want to miss this one.

Snacks

Last night I fixed up a smaller than usual vegetable plate consisting of celery and carrots with hummus.  What can I say, that lasagna was filling!

…and a serving of Annie’s Salted Caramel Kettle Corn.

Not only is the ingredient list for this kettle corn great, but it is delicious and seriously addicting, which is precisely why I portioned out one serving into a bowl and immediately put the bag away!  I know myself well enough to not eat it straight from the bag ;).

And that is all she wrote, folks!  I finished off my week of vegan eats with a tasty treat and a true feeling of satisfaction from having eaten plant-based for seven days straight.  It was somewhat of a challenge, at times, but for the most part it was a very rewarding and educational week.  I reaffirmed to myself even more that vegan foods are delicious and that following a vegan diet does not have to be limiting.  I hope you learned this, as well!
