What Vegans Eat: A Week of Vegan Eats

Happy Saturday!!  We have finally made it to the weekend :).  And…we have almost made it to the end of my vegan week of eats.  I have one more day of eating vegan (today), and two more vegan eats posts for you.  So let’s get down to it.  Here is what I ate during my vegan day yesterday:

Day #6: Friday, March 29, 2013

Breakfast

One of my go-to breakfasts is toast with nut butter.  It seriously does not get much better than warm and melted nut butter on crispy, perfectly toasted bread.  On Friday morning I ate two pieces of toasted whole wheat bread.  One slice I smeared with Trader Joe’s cranberry apple butter, and the other I slathered in Trader Joe’s unsalted crunchy almond butter.  I also sprinkled this piece with a few dashes of cinnamon.

I also ate a big bowl of fresh fruit, consisting of strawberries, raspberries, blueberries, blackberries, and one mandarin orange.

Mid-Morning Snack

Partway through the morning I ate a banana.  I forgot to take a picture, but I am fairly certain that you know the drill by now ;).

Lunch

For lunch, I made a tempeh and black bean taco salad using my leftover taco-seasoned tempeh and black beans from Thursday night.  My taco salad consisted of Romaine lettuce, onions, taco-seasoned tempeh and black beans, tomatoes, and salsa.  It was really good!

I also ate a Gala apple on the side.

Snack

Before heading out on a bike ride, I snacked on a package of Trader Joe’s whole natural almonds.  Such a tasty and protein-rich treat!

Dinner

Last night’s dinner was a Spicy Buddha Bowl made from black beans, roasted sweet potatoes and cauliflower, zucchini, red peppers, and green cabbage.  I will be posting this recipe next week, and let me tell you…it is a good one!

Snacks

And the vegetable plate makes its sixth appearance of the week.  What did I tell you?  This is one of my go-to snacks and an awesome way to get in more vegetables near the end of the day.  Friday night’s plate consisted of green peas, celery, carrots, and hummus.

I also ate a small dish of fresh cantaloupe…

…paired with air-popped popcorn.  I sprayed my popcorn with a little bit of olive oil spray, and sprinkled it with fine sea salt, nutritional yeast (for a cheese flavor), and a few dashes of curry powder.  Let me tell you, I had no idea that vegan popcorn could be SO good!

    Oooh, cranberry apple butter sounds amazing, I'll have to try to recreate that for a twist on PB&J! And I love nooch on popcorn, it's even better than regular non-vegan popcorn.

      This is the first time that I have ever put nutritional yeast on my popcorn, but let me tell you..it will not be the last! :)

    It's great how you went vegan for a week! I'm really impressed. I loove toast. Nut butter is life! Black bean salad is so good. A great way to get protein with no meat!

    Well you definitely don't look like you're missing out on anything by going vegan. It all looks very m,my. Love the idea of pop corn with nutritional yeast!
