What Vegans Eat: A Week of Vegan Eats

Well folks, we have officially made it to Friday and to the end of the work week (for most of us, anyways)!! 🙂  Is anyone else as excited about this as I am?  Of course it is not only Friday, it is also day #5 of my week of vegan eats.  Let’s see what tasty plant-based foods I have been eating, shall we?

Day 5: Thursday, March 28, 2013

Breakfast

Thursday’s breakfast might look familiar (what can I say…I am a creature of habit!).  I ate a bowl of Kashi Go Lean, Arrowhead Mills Puffed Corn, and Cascadian Farms Cinnamon Crunch cereals with unsweetened vanilla almond milk.

On the side I ate a cute little mandarin orange.

Mid-Morning Snack

I ate some green grapes (unpictured) at a work meeting, and then followed them up with a perfectly ripe banana.

Lunch

Lunch consisted of a bowl of leftover Irish Lentil soup from Tuesday night topped with crumbled saltine crackers.

I followed up my soup with a crisp and sweet Pink Lady apple.

Snack

Before my workout I snacked on some Bombay Curry kale chips.  If you have never tried kale chips before you really need to.  Not only are they delicious, but they are an incredibly healthy “superfood.”  One serving of these kale chips contains 6 grams of protein, and they are a great source of Vitamins A, K, and C, Iron, Calcium, Manganese, Copper, Potassium, and fiber.

Dinner

For dinner I fixed up a quick meal of tempeh and black bean tacos (recipe to come).  Not only was this a fast and easy meal, but it was darn tasty!

Snacks

Thursday night’s snacks consisted of celery, carrots, and roasted radish chips with hummus…

…fresh blueberries (these had seen better days), strawberries, blackberries, and raspberries…

…and some original Pop Chips.  I love to pair my fruit with a salty snack in order to balance out the sweetness.

That’s it for day #5 of my vegan eats.  The end of the week is near and, to be honest, I cannot wait to eat some eggs! 😉

    Pink lady apples seem to be out if season here but I so miss them, yours looked really fresh and yum.

    Those radish chips look so interesting. I love fresh radishes dipped in lemon salt. That Irish lentil stew is calling my name still. i need to make it!

    That's pretty cool going vegan for a week. I might be able to make it a few days, but I would miss my eggs and I could never really give up my cheese. At least I know my weaknesses. I love the berries and all the fruit you consume daily. I'm a fruit addict too.

    I love Rhythm kale chips! They're truly one of the most nutritious (and delicious) packaged snacks on the market--so good! And speaking of chips...tell me more about the radish chips! Was this your first time making them? I'm not a huge fan of raw radishes, but something makes me think I'd enjoy them much more roasted. :) Happy weekend, Hannah! <3 xoxo

    I love pink lady apples! Would you say you felt any different going vegan for the 5 days? I could totally do it as I have said before, I guess I would miss greek yogurt but really my biggest issue would be dining out and missing my favorite desserts.

      I eat vegan a lot anyways, so I have not noticed a huge change yet. However, if I extended my vegan eating for a longer period of time I imagine that I would notice some difference.

    I went vegan for a while and eggs were the hardest for me to give up! It (obv) didn't last, but I learned a LOT!

      Yes, I can eat tofu scramble in place of scrambled eggs, but there really is no substitute for a good dippy egg! :(

    I'm so glad I stumbled upon your blog, and that you mentioned kale chips! I've been wanting to try them, but never have! What other flavors do you like besides the curry? (I'm not a huge curry fan).

    Lentil soup is my favorite! I've never found radishes appetizing before, but those actually look really freaking good!

      It is good! It does not have a TON of flavor, but the texture and crunchiness of it is great :).

    Yeah, still haven't trend the roasted radish ;) But I can't take my eyes away from it - thank you for the link. It's on my "make it" list :D
