What Vegans Eat: Day 2

Day #2 has rolled around on my Vegan Week of Eats, and I am still going strong!  In fact, I generally eat vegan foods so often that it has not seemed like much of a change for me at all.  Now let’s get right down to it and see what this vegan for the week ate!

What Vegans Eat: A Week of Vegan Eats

Day 2: Monday, March 25, 2013

Breakfast

For breakfast I ate two pieces of whole wheat toast smothered with half of a smashed avocado and topped with salsa.

I also enjoyed a delicious bowl of fresh fruit consisting of green grapes, raspberries, blackberries, blueberries, and one mandarin orange.

Mid-Morning Snack

I bet you didn’t see this one coming ;).  You can expect to see this same snack for the next five days, too!

Lunch

On my lunch break at work I ate leftover Green Chile Seitan Casserole that I had stashed in my refrigerator (recipe to come!)…

Snack

Before popping in a Jillian Michaels’ yoga DVD, I snacked on two Wasa crisp breads topped with PB2 peanut butter and blackberry jam.

Dinner

I made The Happy Herbivore’s Creamy Mushroom Barley for dinner.  This is the second time that I have cooked this recipe, and I loved it even more this time around!  I cannot wait for the leftovers later this week :).

Snacks

In the evening I made a vegetable plate with cooked peas, celery, carrots, and hummus.  This is one of my go-to snacks.

…and some Trader Joe’s Lentil and Potato Crunchy Curls (sorry for the crumpled bag…this was obviously opened previously! ;)).  These are super good, by the way, so you should absolutely buy them the next time that you stop by TJ’s!

And that concludes “What Vegans Eat: Day 2.”  And yes, that does rhyme! 😉

    Seriously, all your meals/snacks look delicious. I made my first mushroom barley soup this past fall, and it was amazing. Your post reminded me that I should make it again!

    You make eating vegan look so easy! You definitely get your fruit servings in. That soup sounds super good! I've never been to a TJ's ... I really want to go!

      Avocado on toast is one of my favorite breakfasts! And yes, you NEED to try the lentil chips. They are awesome!

    I've never cooked seitan before so I'm looking forward to that recipe! I wish I had a TJs near me but it might be an issue for my budget haha I have a feeling I'd want to buy everything there!

      This was the first time that I cooked with seitan and I really liked it. Look for the recipe early next week! TJ's can definitely be hard on the budget. I am actually somewhat glad that it is a good 15-20 minute drive for me so that I do not go there every day! ;)

    I usually tell people that I could never be a vegan again, but after seeing your eats, I'm definitely reconsidering! Everything looks so SO delicious--especially the Creamy Mushroom Barley! Yum. And I could definitely get used to eating avocado toast for breakfast. :) I'm looking forward to that Green Chile Seitan Casserole recipe! xoxo

      I think that it really does amaze people how tasty vegan eats can be! I love incorporating them into my diet as much as I can, but I still like my eggs, yogurt, and cheese now and then ;). Avocado toast is the best! I had it again for breakfast today :).

      I do not feel any different, so far. But I think that that is because I already eat vegan 3-4 days per week, and many of my "vegetarian days" consist of mostly vegan food. Since becoming a vegetarian/vegan, I have noticed significant improvements in my acid reflux, in how often I get sick (like..never!), and in my energy level. Plus, I just feel better about myself! :)

    your bowl of fruit looks so good right now! and I love those TJ's chips...however I cannot seem to eat savory type foods like that for breakfast, I'm usually looking for something sweet or fruity.

    Love this series so far! Definitely interesting..and those TJ's chips are something I never would've thought to try...but now I think I will next time I shop there!

      You absolutely should. Lentil chips are amazing AND they are pretty high in protein as far as "chips" go.

    I saw those crunchy curl things at TJs the other day and was wondering about them... LOVE me some Wasa crackers. I need to get back into them. There was a period of time when I made a new "Wasa wonderful" creation every day. :)

      Wasa crackers are awesome! And you should definitely buy the crunch curls the next time that you are at TJ's. They are tasty! :)
