Today is Wednesday…Wednesday, March 20th to be exact!  Which also means that it is my dad’s birthday!  So, I must give a birthday shout out to him :).

Now I am pretty much wordless tonight, so let’s just get right to the eats, shall we?

I headed into work one hour early at 7:00 a.m. this morning, so I decided to take my breakfast on the go.  While hard at work, I ate a bowl of cereal containing Kashi GoLean Original cereal, Cascadian Farms Cinnamon Crunch cereal, and Arrowhead Mills Puffed Corn cereal.  I topped my cereal with unsweetened vanilla almond milk, and ate a mandarin orange on the side.

My banana was eaten later in the morning as my mid-morning snack!

Lunch consisted of leftovers from Monday night’s dinner: Aloo Matar from the Happy Herbivore Abroad cookbook, which I served over a bed of cauliflower “rice” and topped with a bit of sriracha sauce.

I also ate a Red Delicious apple on the side.  And it was just that…delicious!

I left work at 3:00 today to go become an “official” resident of Nebraska.  I now have the driver’s license and license plates to prove it, too!  I am not quite sure how I feel about this, though.  But don’t worry… I will always be an Iowan at heart :).

After my fun adventure at the DMV (hah…not!), I needed a little snack before doing some yoga.  I ate three Wasa cracker breads topped with PB2 peanut butter and a sprinkle of cinnamon.

For dinner tonight, I made Michelle’s Portobello, Parsnip, and Sweet Potato Barbecue Stew.  I followed her recipe, but used bottled barbecue sauce and added fresh spinach and several tablespoons of sauerkraut that I had leftover in my fridge.  I served the stew over whole brown rice.  It was tasty!

Snacks

Tonight’s snacks have/will consist of:

celery and baby carrots with hummus.
steamed broccoli and mushrooms.
fresh cantaloupe, strawberries, blackberries, and blueberries,

…my current snacking addiction: BBQ Pop Chips!

So, how did I do for my day of GREEN eats?  Well…definitely not as good as last week, but I did manage to sneak in some peas, spinach, celery, and broccoli for a grand total of four green eats.  Not too shabby, I suppose!

What Vegans Eat: A Week of Vegan Eats

As you  may know, I am a vegetarian who eats vegan three to four days per week.  Beginning this Sunday, I will be starting an all vegan week of eats.  I will blog about my daily vegan eats beginning on Monday.  If you are interested in trying out a vegan diet for a week, a couple of days, one day, or even just for a couple of meals throughout the week, I would love for you to join me!  I promise you, you will come to realize that vegans eat some darn good food!

    I am interested in seeing how it is to go vegan for a week. I don't know if I could do it. I have been a vegetarian for almost three years, I drink almond milk instead of regular (and bake and cook with it too), eat way less cheese than I used to, but I like my egg whites.

      The most difficult thing for me to give up in regards to dairy is definitely eggs!! I 'em! :(

      It is powdered peanut butter that you add water to to make it a peanut butter consistency. It has waaay less calories, which is nice at times for people like me who are obsessed with PB :). You should give it a try!

      Me too. I always have at least 3 different kinds in my bowl. It helps prevent me from getting bored ;).

    Pop chips are awesome- so addictive! And as much as I love eggs, cheese, and chicken, I completely agree about vegan foods being tasty- it's just about being creative and finding ways to make it work for you!

      Yes, this past year and a half I have been WAY more creative in the kitchen than I ever have been. I have a vegetarian/vegan lifestyle to thank for that!

      I absolutely recommend all 3 of her cookbooks. I rarely use any other cookbooks because I love her's so much!

    That sounds really interesting! I can't wait to hear about how a full week of vegan eats is. I love eggs and greek yogurt I dont think I could do a diet that didn't allow those.

    Ahh, the DMV. Only a business run by the government could get away with such awful customer service. Not to be negative or anything! :) I am interested in following your week of vegan eating. I also rely on greek yogurt/cheese/eggs as my main protein sources (besides beans) and I try to eat soy in moderation so vegan would be really tough for me. But I'd like to see how it work out for you.

      I will definitely be relying on tofu, tempeh, beans, nuts, whole grains, and veggies for my protein for the week. I will try to keep track of my protein intake so I can let everyone know how that goes.

    Vegan eats are delicious!! As long as you do it right :) I had my mom go vegan with me for a week once and she was only eating doritos and oreos. Fail, mom. I am posting about a vegan/raw restaurant I visited on vacation later today. You should check out their menu for good recipe ideas!

      Yes, there is definitely a difference between healthy vegan eats and not-so-healthy vegan eats. It still baffles me that Oreo's are vegan! I will def. check out your restaurant review. I LOVE reading about vegan restaurants.

      I think that I will like it. I am already used to 3-4 days of vegan eats, and sometimes on my "vegetarian" days I still find myself eating mostly vegan. It shouldn't be TOO much of a challenge for me.

    Ahhh I love pop chips! My favourite flavour is definitely the parmesan garlic. Your stew looks really good by the way. Any sources of proteins you'd recommend I use when making vegetarian dinners? It's nice to go meatless once in a while :)

      Have you tried the Thai Chili Pop Chips? I LOVE them!! I absolutely can recommend some great protein-rich sources other than meat to incorporate into your meals: tofu, tempeh, seitan, beans (my favorite are chickpeas!), lentils (VERY high in protein), whole brown rice, quinoa, and vegetables (yes veggies...1 serving of peas has 5 grams of protein!). I hope that helps! :)

    I simply don't know how to eat just ONE type of cereal. I have to blend at least three at all times. :) I need to go back to eating Wasas. I was on SUCH a kick for a very long time...I came up with all kinds of crazy concoctions. Also, that stew looks amazing, and adding sauerkraut sounds like a stroke of pure genius.

    I literally JUST bought more Wasa crackers at Whole Foods! I always devour them with hummus but I bet they're delish with pb2. All your eats look divine!

      Wasa crackers are awesome! I also loving spreading a Laughing Cow cheese wedge and jelly or jam on them. So tasty!
