Mexican Breakfast Quinoa

Welp, I did it again.  I just had to make a breakfast dish made with quinoa.  I find it weird that I actually crave quinoa, but it is true.  And trust me, I am totally not complaining.  Generally I stick with eating quinoa for lunch or dinner, but on occasion, I love centering my breakfast around this powerful grain.  After all, savory breakfasts are some of my favorites!

Mexican Breakfast Quinoa

Servings: 1

Ingredients

1/3 cup dry quinoa
1/2 avocado (divided)
1/3 cup salsa
1/8 tsp cumin
cayenne pepper, to taste
black pepper, to taste
1 egg
nutritional yeast, optional
hot sauce or sriracha sauce, optional

Directions

1. Cook quinoa according to package directions.

2. Once the quinoa is cooked, stir in half of the avocado (this will end up being 1/4 of the whole avocado), salsa, cumin, cayenne pepper, and black pepper.  Cook the quinoa over medium-low heat for approximately 3 minutes, or until the avocado is warm.

3. While the quinoa/avocado/salsa mixture is being heated, cook one egg sunny-side up.

4. Spoon the quinoa mixture onto a plate, top with nutritional yeast, half of the avocado (sliced), and the sunny-side up egg.  If desired, top the Mexican Breakfast Quinoa with hot sauce or sriracha sauce.

Serve the Mexican Breakfast Quinoa with your favorite sweet fruit to balance out the spiciness of this savory breakfast dish.

I chose to serve mine alongside a Cutie mandarin orange (am I the only one who cannot get enough of these?).

Oh, and I should mention…it is a requirement to cut into the yolk of your sunny-side egg and break it so that the dippy part of the egg can be incorporated into the quinoa.  I mean, let’s face it…that is one of the best parts! 😉

If you have never eaten a savory breakfast before then you really must give this recipe a try.  Or, if savory breakfasts are not your thing, try this for lunch or dinner!

    Savory just doesn't interest me for breakfast--but you're right, this looks like an incredible lunch or dinner!! Talk about a power meal!

    This looks awesome! I make sautéed veggies topped with sunny side up eggs for dinner about once a week. Like the idea to serve over quinoa...will try that!

    Your runny yoke looks PERFECT! I'm completely on board with it being a requirement to incorporate the yoke into the quinoa, too. :) Savory breakfasts like this are oftentimes my favorites; for some reason I find them more satisfying than the sweet ones--especially when they involve avocado!

    I'm glad you cal lit the dippy part of the eggs. I call eggs with runny yolks "dippy eggs" and pretty much everyone I know teases me for it :-D I've been super obsessed with avocado in my breakfasts lately, so this sounds soooo goood.

    Holy YUM! I don't normally have savory breakfasts (I like my smoothies which taste like ice cream haha) but that looks SO good!

    I am normally a fan of sweet breakfasts but do get the occasional egg cravings in the morning! Love the sound of this dish - I make something quite similar but scramble the eggs and then mix it with the quinoa and top with feta instead of nutritional yeast...it's a favorite :)!

    This reminds me a lot of the lentil breakfast my mom and I had a few weeks ago. I am almost always a sweet breakfast person but I do love quinoa and all of these flavors! Your dippy egg looks perfect!

    So delicious, fresh and healthy! I love hearty, nutritious breakfasts to start the day off on the right foot! I've never had quinoa for breakfast, but this is a great idea considering how protein-rich and healthful it is for ya! Great thinking!

    I love quinoa! It's never dawned on me to make it for breakfast, though - what a great idea! I'm not a huge fan of runny yolks, but I would be open to trying a slightly runnier yolk atop a bed of quinoa. Thanks for sharing :)
