“Sausage,” Sweet Potato, and Apple Soup

One of my most favorite dishes that I have cooked since starting this blog is this:

Sweet Potato and “Sausage” Hash

Several weeks ago I had a major craving for this delicious hash.  I also had a major craving for soup (big surprise there!).  Then I got to thinking…why not combine the two?  And so became…

“Sausage,” Sweet Potato, and Apple Soup

Servings: 2

Ingredients

water, for cooking
2 cloves garlic, minced
1/2 yellow onion, diced
1 apple, diced (I used a Jonagold)
1 medium sweet potato, peeled and diced
1 vegan sausage link, sliced (I used Field Roast apple and sage)
1/2 tsp cinnamon
1/2 tsp dried thyme
1 tsp dried rosemary
1/2 tsp dried sweet basil
1 TB nutritional yeast (optional)
black pepper, to taste
fine sea salt, to taste
EVOO cooking spray
2 1/4 cups water*
2-3 tsp Better Than Bouillon vegetable soup base*
2 cups fresh spinach

*Vegetable broth can be used in place of the water and soup base.

Directions

1. Line a large soup pot with a thin layer of water.  Heat over medium-high heat until very hot.

2. Lower the heat to medium and add garlic, onion, apple, sweet potato, sausage, and all seasonings.  Cook, stirring frequently, for approximately 15-20 minutes, or until the vegetables and apples are tender.  Add additional water and/or EVOO cooking spray, as necessary, to keep ingredients from sticking.

3. Once the vegetables are cooked through, add water and vegetable soup base.  Increase heat to medium-high until the soup is boiling.

4. Once boiling, lower the heat to medium-low, add spinach, and simmer for approximately 5 minutes.

5. Eat with your favorite crackers and/or bread.

I ate my soup with crumbled saltine crackers.

This is definitely one of the tastiest and easiest soups that I have made, to date.

You could certainly make this soup using “real” sausage (preferably chicken or turkey), but if you have never tried Field Roast’s vegan sausage then I highly encourage you to do so.  This company is definitely doing something right because it is delicious and I would never guess that it is not the “real deal.”  Now… go. eat. soup!

    I've made sweet potato & apple soup in the past but I love the addition of sausage! And saltine crackers are the new croutons ;)!

    Oh I've never had apples in soup before - although one of my favorite "brat" combinations is veggie chicken and apples so I'm sure this would be amazing!

      I am sure it would be a great combination. I have heard of apple chicken sausage so that might be a great addition to this soup.

    I LOVE field roast--especially the apple one! I'm a soup fanatic all year round, but especially this time of year with all of our gross snow. Sounds tasty!

      I like this WAY more than I ever liked sausage when I was a meat-eater. You should absolutely try it.

    That soup sounds so good! I love sweet potatoes and I bet they would be really good with apples and those seasonings. I have never tried nutritional yeast, I have seen it on a lot of blogs and been thinking that I should give it a try.

      Nutritional yeast is awesome. It gives food a cheesy flavor and has great nutritional benefits (hence, the name ;)).

    I seriously hate meat substitutes, but Field Roast apple sage sausage is one of the best foods on the planet. I seek out sausage recipes just so I can put it to use. I love this soup!

    I've never heard of apples in soup, but it kind of makes sense. I mean, they are both sweet and sometimes a bit tart and would add a great texture to the soup. I like this idea! Thanks for sharing! :)

    My momma makes a fabulous sweet potato and apple casserole every Thanksgiving that I love, but I never would have thought to add apple to soup - sounds delic!
