What’s in My Grocery Bags (#8) + Weekly Meal Plan

It’s Sunday and I actually do not have the Sunday blues today!  Why, you ask?  Because I am one of the many who are lucky enough to have a three-day weekend!  I am loving it, and I have decided that this needs to be a regular thing.  If I had the opportunity to work four 10’s in a week, I would be all over that.  I am guessing that I am probably not the only person who shares those sentiments.

Even though tomorrow is not a work day for me, I still want to keep with the theme of Sunday as being the day for preparing food and getting ready for the week.  Today I am going to give you another peek inside of my grocery bags (which have changed quite a bit since last time now that I am eating meat).  I think I will also include the prices again since that is kind of fun (and a bit scary, at times) to see.  I’ll wrap up the post with my meal ideas for the coming week.  It’s nice to not only see the groceries, but also see how they will be put to use!

Julian_bakery_paleo_breadgrain-free coconut paleo bread- $11.39 <– crazy, right?  FYI: do not buy this if you are expecting it to taste even a little bit like real bread.  I could not eat it.  Thank goodness Whole Foods has a great return policy.  This baby is going back today!

That’s a grand total of $89.34 from Whole Foods, Trader Joe’s, Natural Grocers, Sam’s Club, and Tea Vision.  I have been trying to be smarter about shopping for the best deals, which ultimately results in me stopping by a million different stores.

Now let’s see how all of those groceries are being put to use.  Following are the six dinners that I have planned to eat this week.  Since I am trying to be a bit more intuitive with my eating, I have not assigned a specific day for each of these meals to be made.  We will just see what I am craving as the days come!  Oh and for the heads up, I had several of the necessary ingredients for these meals at home already, which is why you do not see everything in the pictures above.

Weekly Meal Plan: May 24-29

Dinner #1: Dinner with girlfriends (tonight!)
Dinner #2: Lemon pepper chicken + veggies
Dinner #3: Gigantic veggie-packed salad with hardboiled eggs and  homemade ranch dressing
Dinner #4: Plantain nachos + fruit
Dinner #5: Split pea soup with tuna + grain-free “tortilla chips”
Dinner #6: Leftovers

I plan to use the majority of the leftovers from these meals to serve as my lunches for the week.  I love the philosophy of “cooking once and eating twice.”  I love it even more when it is “cooking once and eating four times!”

It is going to be a tasty week of eats.  I hope y’all have a great rest of your Memorial Day weekend.  I have yoga plans this morning with Jordan, followed by dinner at Bonefish Grill tonight with Erin and Jordan.  I worked my butt off Friday and Saturday, so I am hoping that I will spend the majority of today and Monday cooking, relaxing, and just enjoying an extra day off.  I hope you are able to do the same!

    Did you get that spinach at Natural Grocers? And is it a big size tub like the ones at Whole Foods? Because those are normally $5.99 so that's a great deal!!       I get my spinach at Sam's Club.. best deal I've ever seen it. It blows me away because it's practically half the price of everywhere else!

  • I'm all about cooking once and eating twice (or more), Hannah! And you're definitely not the only person who favors a four-ten workweek. When I was working as an employee, I would've given anything to go that route (or a three-twelve route). A solid day of uninterrupted time makes a big difference in productivity! Are you going to post your lemon chicken recipe? I'm always eager to try lemony recipes. Is it a recipe that would lend itself to subbing tofu or seitan for the chicken? Thanks!       I'll be sharing the lemon chicken recipe link in a future Friday Foodie Favorites. But if you need it now, it's from Uproot from Oregon! I have no clue about substitutions since I have not make it yet, but I'm sure a similar concept could work well with seitan or tofu. You'll have to let me know if you try it!
