WIAW: October 15, 2014 (Recent Eats)

Today marks the halfway point of the month of October and I have to admit that I am a little annoyed about it.  On the one hand, I am getting awfully excited for the holiday season that is approaching.  On the other hand, October is easily one of my favorites months so it is a bit sad to see if moving along so quickly.  Before you know it, the gorgeous colors of Fall will be gone and it will be (gasp) snowing!  The first snowfall is always pretty in my eyes, but once January hits I am over it.  Here is to hoping that the rest of October doesn’t move too quickly and that the Fall-like weather somehow sticks around longer than I anticipate it actually will.

recent eats 2I found my new favorite salad topping at Whole Foods this past weekend!  These are just perfectly salty and add a healthy crunch in place of croutons.

recent eats 5I added the soynuts to a salad made up of Romaine lettuce, tomatoes, onions, red peppers, sauerkraut, pineapple, roasted sugar pumpkin (I found this pre-cut at Trader Joe’s), and Hillary’s Eat Well vegan chia ranch dressing.  I know that sounds like a total hodgepodge, but it was delicious!

recent eats 3Another pumpkin find from Trader Joe’s that I could not say no to: Pumpkin O’s Cereal!

recent eats 4Apparently Trader Joe’s and I became best friends (even more) during my recent grocery shopping adventures.  I am a major apple cider lover, so I picked up this honey crisp apple cider to check another thing off of my Fall Bucket List.  I love honey crisp apples and I loved that there were no funky ingredients added in.  Do yourself a favor and go buy this.  I heated it up on the stove and it was perfection.

recent eatsMy spaghetti squash cravings are still going strong.  I made another batch of my Spaghetti Squash and Eggs with “Cheese” for dinner a few nights ago.  It was just as good the second time.

recent eats 7I have shocked myself with my next newest addiction: hot oatmeal.  I cannot tell you how many times I have tried and hated warm oats.  Maybe trying it several times made the difference?  Or… maybe it was the addition of pumpkin!?  I have been making up batches of pumpkin and raisin oats (essentially unsweetened vanilla almond milk, pumpkin, cinnamon, pumpkin pie spice, all spice, raisins, quick oats, coconut sugar, and vanilla) on the weekend and bringing them to work for breakfasts during the week.  I love stirring in nut butter or sunflower seed butter.

recent eats 9Does anyone else put mustard on their sweet potatoes, or am I just a weirdo? 😉  If you are a mustard lover then you definitely need to give it a try.  I love it!  Oh, and for the heads up: Come back tomorrow for a tutorial on how to “bake” a sweet potato in the microwave!

recent eats 8I made another batch of my Pumpkin Chocolate Chip Pancakes on Saturday morning.  I topped them with my favorite pancake topping: peanut butter.

recent eats 6I have heard a lot about the benefits of raw apple cider vinegar (including helping with acid reflux, which I struggle with) over the past several years.  I decided to try giving it a go and have been adding it to my water most mornings.  I’m not going to lie, it does not taste good at all.  But I am doing my best to drink it down.

recent eats 4More broccoli pancakes with sundried tomato ketchup.  These babies are addicting!

recent eatsOne of my favorite recent dinners: sauteed kale with roasted peppers, tomatoes, and a lemon tahini dressing + roasted sweet potatoes + quinoa and rice.

recent eats 3Now that cooler weather is upon us, the Winter cup is back!  Inside was a green smoothie with chocolate Vega, almond milk, frozen banana, frozen zucchini, and fresh spinach.  No matter what season it is, I always drink my green smoothies.

recent eat 6For dinner last week, I made some of the most delicious lentil tacos.  I’ll have more on these in a future Friday Foodie Favorites post.  You are definitely going to want to check these out!

recent eats 2And to show you that I am not perfect and I DO splurge: a picture of my Pizza Hut dinner at my parents’ house.  Plus another couple of pieces after that.  Sometimes I just need some pizza 😉

    So many great eats! Would you be willing to write down the measurements you used for the hot pumpkin oatmeal? It looks creamy & delicious!

      I actually based it off of a recipe that I found online... I will try to hunt down the one that I used or next time I will try to remember to write down what I throw in there! ;)

      Yes!! Sweet potatoes are one of those foods you can pretty much put in anything and top with anything and they taste amazing.

      Yeah... I'm not really ready for the snow thing yet. Ask me next month, though, and my mind might have been changed by then ;) Also, if it does snow, we should all just make tacos and then we will be happy, right? ;)

      They are a seriously AWESOME addition!! Check out Whole Foods or if you do not have access to WF, I am sure you can find them at other grocery stores.

      I have not!!! But thank you for telling me about them. I'll be on the lookout next time I am at TJs! And I hear you... the pretty leaves are definitely one of my favorite parts about Fall so they need to stick around for awhile!

      Yes! My body just seems to really CRAVE all of the seasonal foods. I am sure it is not at all influenced by what other bloggers are eating/raving about ;)

    I add eggs to basically everything, but I have not added them to spaghetti squash. Thanks for the genius idea! Also the pumpkin-O's cereal looked amazing, loving all the fall foods!

      I tried the ACV/water with less apple cider vinegar and it was SLIGHTLY better.. but definitely not good :/

    I love Fall but it ends up usually being a short season because everything around us is telling us it only gives way to cold. And all the Christmas stuff appearing in the stores isn't helping. I love your food shown here, and I've never thought to put eggs in my spaghetti squash. I've never done mustard on a sweet potato, but I do like adding almond butter to them. Have a great Wednesday!     I am a mustard freeeaaaaaak. And yes... I am that girl in the restaurant and at home slathering it on or dipping my sweet potato in mustard AND ketchup. Tastes like fries and is soooo yummy. I even put cinnamon on top before dipping in mustard. You're the only other person I see do this, so this makes me happy :)

      Yay! It is rare that I find others who dip their sweet potato fries in mustard, so that is fun :) Next time I will definitely add in some cinnamon. It sounds like a good sweet/savory combo!

    Best-looking meal in there: your plate of kale with roasted peppers, tomatoes with quinoa and rice. Do you just cook the last two in water together? I'd eat a lot more brown rice if it wasn't for the 40-minute cooking time. I thought adding quinoa with its much shorter cooking time might not work but it apparently does!?       It was definitely delish! I actually use a pre-packaged/seasoned container of rice and quinoa and simply followed the directions on the package. I'm not sure how it would work to attempt it with plain quinoa and rice. May if you used par-boiled rice that takes less time to cook? Let me know if you try it!

    Try Bragg's Raw & Unfiltered Apple Cider with Mother...it's my favorite apple cider vinegar...it's also alkalizing :-D
