Vegetarian Recipes Perfect for “Brinner”

in Other

This recipe collection of Vegetarian Recipes for “Brinner” is sponsored by Foodie.com through Mode Media.  As always, all thoughts and opinions are my own.

Forgetting to eat breakfast or skipping breakfast altogether are not things that you will ever find me doing.  I am a breakfast lover thru and thru because breakfast provides me with energy, gives me something to look forward to each morning, and is downright delicious.  These same reasons are why I also love to eat breakfast for dinner.  The idea of being able to eat breakfast for two meals out of the day really excites me!  Anytime “brinner” is on the meal plan for the day, I cannot wait to leave work and get to cooking!

For the most part, breakfast is relatively easy to make and is often quite affordable.  These two things make incorporating breakfast for dinner (or “Brinner”) a great idea especially for those of us with busy week day schedules.  Plus, it is generally pretty fool proof since I have yet to find a breakfast recipe that I did not really like.  Who doesn’t like breakfast?

In the spirit of all things breakfast and of incorporating “brinner” into your weekly meal plans, I have created a Foodie.com recipe collection with vegetarian recipes that are perfect to eat for dinner.  No, there will not be any bacon or sausage in this collection.  But that is the beauty of it!  Vegetarian breakfasts are just as delicious and you just might find the added bonus of many of them being a lot healthier.

Check ’em out!

BRINNER! Oh I love this 🙂 Anytime I can have breakfast for dinner I’m a happy girl. Like you, I often don’t have time the morning to create an elaborate breakfast. But at night, my favorite brinner is whipping up a beautiful omelet (spinach, roasted red pepper and red onion) with crispy sweet potato hash! Oh yum! Umm hello veggie burger hash – might have to try that next time 🙂 Thanks for sharing!!
