What Vegans Eats: A Week of Vegan Eats

Day 3: Tuesday, March 26, 2013

Not only is it Day #3 of my vegan week, but it is also…

…What I Ate Wednesday!! (though technically these eats are from Tuesday ;))

Let’s see how I did in both the vegan world and the GREEN world!

Breakfast & Mid-Morning Snack

So this might look familiar, but what can I say, I love cereal!  For breakfast I ate a bowl of Kashi Go Lean, Arrowhead Mills Puffed Corn, and Cascadian Farms Cinnamon Crunch cereals with unsweetened almond milk.  On the side I had a cute little Cutie!

My mid-morning snack: the banana.

Lunch

On my lunch break I ate leftover spaghetti squash “pasta” with pasta sauce, onions, tomatoes, mushrooms, roasted broccoli and zucchini, and a few meatless “meatballs” from Trader Joe’s.

I also ate a serving of peas (please excuse the icky Tupperware container).  Yay for five grams of protein in just this one serving!

Snack

My after work snack was a sliced Golden Delicious apple dipped in PB2 peanut butter.

Dinner

For dinner I prepared The Smart Kitchen’s Irish Lentil Stew.  I cut the recipe in half and followed it exactly, minus having to using an onion in place of the pearled onions since zero grocery stores seem to carry them around here!  I topped my soup with crumbled saltine crackers.

I cooked up a side of butternut squash to accompany my soup.

Snacks

In the evening I snacked on another vegetable plate consisting of celery, baby carrots, roasted radish chips, and hummus.

I finished out the night with a bowl of fresh cantaloupe, strawberries, and green grapes…

…and a bag of microwave kettle corn popcorn.  I just bought an air popper popcorn maker (which is awesome, by the way!), so I am trying to use up all of my not-so-good for you microwaveable bags.

It sure was a delicious day of vegan eats!

And my green count for the day? 7!! (broccoli, zucchini, and peas at lunch; apple; green cabbage in the stew; celery; green grapes)

    You need to let me know how that air Popper works out, I love some fresh popcorn, I'm trying the radish chip receipe this weekend it intrigues me......are they still spicy??

      The air popper is awesome. You definitely need one with your microwave issues! ;) The radishes are not very spicy once they are roasted. They are delicious :).

    Radish chips! What a great idea :) the lentil soup looks so warm and hearty too. Do you do anything special to the radishes? Little olive oil, salt and pepper?

    I'm trying to use up all packaged foods too! Mixing cereal is awesome. I really want to try spaghetti squash!!

      I ALWAYS mix my cereal. Otherwise I get bored with just one kind ;). You should really try the spaghetti squash. It tastes SO good and is actually good for you!

    that stew totally looks like something I'd love. I wish i always reached for fresh fruit and veggie snacks like you seem to! im way tempted by cookies and cake and junk and stuff

      Haha, I am tempted by those things too! I eat them on occasion, but I do not keep them in my house so I am rarely tempted.

    I love snacking on frozen peas. I had no idea they had so much protein. All these delicious foods are making vegan eating look not only tasty but also easier than I would have thought.

      I always get asked, "where do you get your protein?" And I can honestly say that vegetarians and vegans can absolutely get MORE than enough protein. Peas are the perfect example.

    It's amazing the places you can discover protein when you have to! You are certainly showing us how healthy vegan eating is. Your body is probably pretty happy!

      Yes, I think that my body is definitely happy with my eating choices, for the most part. I can certainly tell when I have eaten something that it does not agree with my the way that it reacts.

    Roasted radish?????? Come one, I had no idea you can even roast it!! Yeah, I'm like a total clueless here. :D I need to try it! Does the roasting takes the bitterness off? I mean it has to be super delicious?

      Yes, roasting radishes is definitely the BEST way to eat them!! The roasting process takes away a great majority of the bitterness of the radish. Here is my recipe: http://cleaneatingveggiegirl.com/2013/02/12/roasted-radish-chips/

    Way to go on the greens count! Isn't the air popper awesome? I love ours . . . . we must use it a couple of nights every week. Perfect nighttime snack.

    Mmmm, don't you just love almond milk with cereal? I've been reducing my dairy (except for ice cream... priorities), and almond milk is my friend.

      Almond milk is awesome! Did you know that they make ice cream with almond milk, too? I have not tried it yet, though, so I don't know how tasty it is.

    I didn't know peas had so much protein. I'll have to get some next time I"m at the store to accompany my dinners! Oh and with your new air popper, you should totally create some cool healthy popcorn combo recipes :)

      Yes, peas are awesome! I will definitely be experimenting with different popcorn recipes. I will have to develop a whole post around them at some point :).

      It is going really well! I am definitely enjoying it so far. Lentil stew is amazing!! I just ate the leftovers for lunch today :).

    My favorite frozen veggie is green beans. If you are near a trader joe's I recommend grabbing a bag!

    I'm SO glad you made the stew and that it worked out for you. I would have used regular onion, but the pearl ones are just so darn cute. :)

      Aren't they? I was so sad that I could not find them at any of the grocery stores near me :(. Either way, the stew was SUPER tasty! :)
