It is March! Wait, what? It is March already?? If your thoughts are anything like mine, then you are likely wondering how March has crept up on us so quickly. Trust me, I am definitely not complaining about this, though. March is one of my favorite months. March means my birthday (I’ll be halfway to 30!) and the start of Spring. And boy, am I ready for some Spring weather!
Now that we have established my excitement about March, let’s get to my eats from the first Wednesday of this great month. It is What I Ate Wednesday! For the month of March we are going green. And with my love for fruits and veggies, this should not be too difficult!
Breakfast
I headed into work one hour early today so I ate my breakfast on the go at my desk. Today’s protein-packed breakfast included Kashi GoLean Original cereal, Kashi Indigo Morning cereal (very good, by the way!), and Multigrain Cheerios all mixed together. I poured unsweetened coconut almond milk over my cereal and ate a mandarin orange on the side.

Lunch
Today’s lunch consisted of baked falafel (recipe to come!) leftover from Sunday night’s dinner. I dipped my falafel in a bit of Dijon mustard.
I also heated up some carrots, sugar snap peas, black beans, and edamame. This may actually be one of the only green things that I ate all day…oops!
Snack
I needed a quick pick-me-up before heading to the gym after work, so I snacked on a PowerBar Pure & Simple Roasted Peanut Butter protein bar. I do not love the ingredients list on this bar, but it had been sitting in my pantry for a while and needed to be eaten. It did the trick, too!
Dinner
I wanted to make something simple and easy for dinner. On the menu: BBQ “Sausage” and Apple Quesadillas. These were awfully tasty! Look for the recipe soon

Snacks
Snacks tonight have/will likely consist of:
Baby carrots and hummus (sorry for the recycled photo)…
…cooked green peas (yes, I eat peas for a snack
)…
…fresh fruit (cantaloupe, strawberries, blueberries, blackberries)…
…and a salty treat (Pop Chips? lentil chips? popcorn?)…we shall see!
So I did not do so great on the whole “eat green” thing with only green foods appearing in my lunch and snacks. I promise, though, that next week will be better!

I’ve never made or tried falafel but have a bag of garbanzo bean flour sitting in our pantry with a recipe on the back that I’ve been forgetting to try… I love chickpeas so I bet it’s tasty! And those quesadillas sound divine – they remind me of my fave chicken apple sausage from TJ’s
