Happy Wednesday blog readers!  Let’s take a look at What I Ate Today…Wednesday! 🙂

Breakfast

This morning I ate two pieces of toasted whole wheat bread- one with crunchy almond butter sprinkled with cinnamon and the other smeared with TJ’s pumpkin butter.  To up my protein intake even more, I ate scrambled egg whites cooked with onions and green peppers and topped them with nutritional yeast.

Oh, and speaking of pumpkin butter…check out this amazing candle that my mom bought me:

It smells pretty amazing.  I would say that she definitely knows me well! 😉

Snack

Lunch

Lunch consisted of leftover “Little Smokies” Vegetarian Meatballs served over whole brown rice.  This time when I cooked these I used Trader Joe’s Meatless Meatballs and I actually had to double-check the package to make sure that they were vegetarian because they tasted so real!

I also ate a Red Delicious apple.

While cooking dinner, I snacked on two lightly salted whole brown rice cakes topped with Wholly Guacamole Roasted Tomato salsa.  Yum!

Tonight’s dinner consisted of Spicy African Peanut Stew, which I ate with crushed saltine crackers.  I followed Sarah’s recipe exactly, except I used coconut flavored almond milk and cooked the soup on the stove top instead of in a slow cooker.  This stew was very tasty and I highly recommend that you make it!

I ate a side of cooked green beans to round out the meal.  Gotta incorporate those veggies! 😉

Snacks

Tonight’s snacks have/will consist of:

A giant and delicious bowl of fresh fruit…

…baby carrots and celery with hummus…

…and likely a salty snack (I am thinking whole wheat Wasa cracker breads topped with a Laughing Cow cheese wedge and blackberry jam).

    I love how creative you are with your meals while being a vegetarian. It definitely shows me that I have no excuse to only eat peanut butter & jelly when there are so many amazing options. Even though I will always love my peanut butter and jelly :)

      One thing that I have learned over the past year as a vegetarian is that vegetarians and vegans can absolutely eat unique, creative, and delicious meals. Meat is really completely unnecessary for me. Cooking as a vegetarian just takes a little extra creativity! And hey, PB & Js are pretty daaaarrn good! ;)

    wow it looks like you had a delicious day of great eats!! The meatballs look great I cant believe they are vegetarian, and the spicy african peanut stew is right up my alley!!!

    Can I come over and eat with you tomorrow?? Everything looks so good--especially that African Peanut Stew. Yum. I love that you spread a different topping on each slice of toast; that's something I do 99% of the time!     I'm suddenly really craving a bowl of fresh fruit...no yogurt, peanut butter but just good ol fashion plain fruit! All your eats look yum, especially the African peanut stew :)!

    Scented candles are wonderful, arent't they? My family isn't keen on them at all so that's one benefit of living on my own :D. Sure, there are quite a few nasty smelling ones but if you find a brand you like the atmosphere they create is so comfy. Which scents other than the Pumpkin Butter do you like? I spy ... chickpeas :) - you know much I like them. Also, I've been meaning to try Mama Pea's stew for ages but somehow still never got around to cooking it. How long did you cook it on the stove top?

      My other favorite scent in the WoodWick candles is the Warm Campfire scent. It is awesome :). You should definitely try out the stew recipe! I threw all of the ingredients together in the soup pot, brought it to a boil, lowered the heat to medium-low and covered it and let it cook for about 50 minutes to an hour. You basically just need to cook it until the sweet potatoes are cooked through and the lentils are ready.

    I LOVE TJ's pumpkin butter. I think I would just about die for that candle too. I'm obsessed with candles. I'd love to know what that smells like. Mmm! Pumpkin/fall scented candles are the best.

    A pumpkin butter woodwick candle?! I love it! I bet that smells completely amazing! Plus, I love how the woodwick candles make that little crackling sound like a fire. :)
