Today is a special edition of What I Ate Wednesday featuring…What I Ate for Christmas Eve/Christmas!
Christmas Eve Dinner
For dinner on Christmas Eve I prepared two patches of soup: Spicy Soyrizo Chili and Vegetable and Ravioli Soup with cornbread muffins. I ate a bowl of chili with oyster soup crackers and a dish of unsweetened apple sauce on the side.
Christmas Morning
Breakfast on Christmas morning consisted of two vegan Chocolate Zucchini Muffins from The Happy Herbivore and a bowl of Greek vanilla yogurt with fresh raspberries and blackberries.
These muffins were good and definitely received rave reviews from everyone in my family.
Christmas Lunch
For lunch I ate a bowl of the Vegetable and Ravioli soup that I prepared the night before with whole grain saltine crackers. I also cooked some green peas to eat on the side. Its was the perfect sized lunch to eat before our Christmas dinner.
Christmas Dinner
My Christmas dinner plate was filled with vegetarian Quorn Turk’y Roast with vegetarian brown gravy, green bean casserole, cheesy potato casserole (made with cream of celery soup), fruit salad, and wheat rolls. I absolutely went back for seconds, too!
This was the first time that I had eaten the Quorn Turk’y Roast and I was very pleased. Many of my family members tried it, and we all agreed that it most definitely tasted like turkey. Had somebody told me that it was the “real thing” I would have likely believed them. I would definitely buy this product again for future holidays.
Christmas Desserts
Christmas would not be Christmas without indulging in a few sweets, including…
A slice of homemade pumpkin pie topped with whipped topping…
…and a few
of these!
It was a delicious day of eats with plenty of necessary sweets!

Yes, it is the one time when I definitely feel the need to majorly splurge! I just cannot resist those yummy desserts! Funny thing is…I actually ate way less than I normally would have, but was totally satisfied. I call that a win-win.

It is really good. I love adding it to my chili because it gives it a nice spicy kick!
