It is that time of the week again…time for “What I Ate Wednesday”
!
Breakfast
Breakfast consisted of 2 pieces of toasted Ezekiel sprouted 7-grain bread (one with 1/2 an avocado and salsa and the other with natural peanut butter and a dash of cinnamon). On the side I had a sliced Gala apple.
A change-up from the usual…I did not (I repeat, did not) eat a banana today! They were way too green so I wasn’t even going to bother with a nasty, unripened banana
.
Lunch
On my lunch break at work today I ate leftover Vegetable Korma with whole brown rice from the Happy Herbivore Abroad cookbook. This cookbook just came out and I was SO excited to get it! (P.s. be on the lookout for a giveaway of this cookbook later this month!
).
Now all mixed together…
Dinner
Tonight’s dinner was spaghetti made from whole wheat noodles, light traditional pasta sauce (with added diced tomatoes and chopped onions), and a dash of nutritional yeast. On the side I enjoyed green beans and unsweetened apple sauce. It was a tasty meal!
Snacks
Tonight’s snacks will likely consist of some sort of vegetable, fresh strawberries and blueberries, and possibly some microwave kettle corn popcorn.
Blog Hiatus
Just for the heads up, I will be traveling the next couple of days and will be very busy. Therefore, you likely will not see a blog update until Sunday or Monday night. Catch ya then!

Yum to all of your meals! I love mashed avo… And I’m not a fan of green bananas either- a few freckly brown spots is the best IMO! Have a fun getaway
