For the first time in several weeks I will actually be posting my “What I Ate Wednesday” post on Wednesday…it’s a miracle!  Either that, or I am just a bit less busy than usual 😉 .

 

 

 

 

 

 

 

Breakfast

 

 

 

 

 

 

 

Yes, this is a recycled picture and a recycled breakfast.  Like last Wednesday, I enjoyed a bowl of Kashi GoLean Original cereal, Crispix cereal, and Multigrain Cheerios cereal with Silk Unsweetened Vanilla Almond milk.  The only difference this morning?  I unfortunately enjoyed this breakfast at the crack of dawn: 3:30 am.  I had to be at work at 4:00 am this morning.  Let’s just say, it has been a long day!

Snack/Break at Work

 

 

 

 

 

 

My mid-morning snack consisted of a banana, and I ate a Johnagold apple and a PowerBar Pure & Simple Cranberry Oatmeal Cookie protein bar on break.

Lunch

 

 

 

 

 
After some not so great eating habits during my trip to Arizona this past weekend, I have been majorly craving fruits and veggies.  Today’s lunch consisted of a salad with a side of fresh cantaloupe.  In the salad mix was: spinach, iceburg lettuce, carrots, onions, tomatoes, steamed broccoli and cauliflower, Trader Joe’s 21 Seasoning Salute, and a dressing mixture of Bolthouse Farms yogurt-based ranch and honey mustard dressings.

Dinner

 

 

 

 

 
For dinner tonight I prepared a deliciously yummy and comforting soup: “No Chicken” Noodle Chickpea Soup.  I served it with whole grain saltine crackers and a side of unsweetened apple sauce (of course!).  This soup recipe will be coming to the blog soon (tomorrow, I hope)!

Snacks

Snacks this afternoon and evening included:

low-fat cottage cheese
baby carrots with hummus
Greek vanilla yogurt with fresh raspberries and strawberries
…and likely either Pop Chips or lentil chips.  I am definitely craving something crunchy and salty tonight!

    Ohh how I miss chicken noodle shoup since going veggie! I'll be on the lookout for your recipe!

      Same here! I have been craving it for awhile and kept seeing recipes for chicken noodle soup on blogs. I kept thinking how unfair it was that I couldn't make those recipes, so I decided to create my own vegetarian friendly version. You don't even miss the chicken!
