in Other

It is that time of the week again…it’s Wednesday! (I think I will get this posted before it officially rolls into Thursday 😉 )  And because it is Wednesday, you get the pleasure of reading all about today’s eats..enjoy!!

Breakfast

Today’s breakfast was a delicious, protein-rich meal consisting of: 4 eggwhites scrambled with spinach, onions, tomatoes, a few dashes of hot sauce, and black pepper topped with green salsa & 2 pieces of 100% whole wheat toast spread with 1/2 of an avocado…so yummy!!  You must try this combination!

Mid-Morning Snack

There he (or she??) is again…the banana!  As you can see, it was turning brown and nicely ripened.  Just the way that I like it.

Lunch

For lunch I enjoyed a spinach salad topped with carrots, onions, zucchini slices, green bell peppers, tomatoes, and Bolthouse Farms Yogurt Ranch dressing.  I had a bowl of steamed broccoli sprinkled with sea salt, nutritional yeast, and Trader Joe’s 21 Seasoning Salute on the side.  I have been eating steamed broccoli like crazy lately.  But don’t worry, it hasn’t replaced my love for carrots, sweet potatoes, peas, and roasted brussel sprouts!

Before I headed to work tonight (unfortunately I worked from 4-11 pm 🙁 ), I ate a serving of low-fat cottage cheese and a 100 calorie pack of whole natural almonds to tide me over until break.

Dinner

On break I enjoyed leftover Mexican Vegetable Casserole topped w/ green salsa and a sliced Gala apple.  I think that the Mexican Vegetable Casserole is definitely one of those dishes that tastes even better as leftovers.  It really hit the spot.

After work I had a late night snack consisting of: fresh cantaloupe, a few holiday red seedless grapes, and Thai Sweet Chili Pop Chips.  I am loving this flavor of Pop Chips.  It is the perfect combination of spicy and sweet!

So there you have it…a day full of Hannah’s eats!

I love putting avocado on my eggs, but I've never tried it on toast. I'll have to try that....I think it would pretty much be good on anything.

Agreed! It is delicious on toast. I have not tried it on eggs, but that sounds awesome too...or maybe a breakfast/lunch sandwich combining all three! :)
