Indian-Inspired Vegetable & Tofu (or Meat of Your Choice) Dish

You may remember that during my Des Moines adventures a few weeks ago I purchased a cook and simmer sauce packet called Tasty Bite.  I selected the Good Korma flavor which contains a blend of coconut, cashews, tomatoes, garlic, and spices.  The Tasty Bite cook and simmer packets are fairly low in calories, the sodium content is better than to be expected, and the Good Korma variety contains only natural ingredients.

 

 

 

 

 

 

 

 
I followed the package instructions and selected tofu, carrots, onions, green peppers, pineapple, and quinoa (grains were not mentioned, but I thought it would give it a bit more substance) to compose my dish.  You can choose any vegetables/fruit and protein that you like.

 

 

 

 

 

I pre-heated 1 TB of extra virgin olive oil over high heat.  I turned the heat down to medium and added the carrots, peppers, onions, and cubed extra-firm tofu and cooked for approximately 4-5 minutes.  Next, I added the cook and simmer packet, covered the mixture, and simmered for about 8 minutes.  Finally, I added in the pineapple and some leftover pre-cooked quinoa (you could use brown rice) and simmered for an additional 2-3 minutes, or until all of the ingredients were hot.  And the results….

 

 

 

 

 

A delicious, flavorful dinner!  I really liked the Good Korma variety of the Tasty Bite cook and simmer packets.  I cannot wait to use it again and to try the other varieties.

 

 

 

 

 

There is nothing better than an easy-to-make dinner that hits all of the food groups: vegetables, fruits, protein, and grains all in one meal.

      I got it at Hy-Vee but I think I also remember seeing them at Whole Foods.
